Vegetarian Casserole/Crockpot Recipes?

I'm pg and HATE cooking! LOL I'm looking for some good casserole and/or crockpot recipes that are vegetarian.

Do you eat tofu?

If so, I can give you my recipes for cabbage carrot casserole and tofu stuffed shells with marinara sauce.

Okay, I kind of "ad-lib" this from a recipe I discovered.

Boil 25 jumbo shells

Meanwhile:

mash 1 lb. tofu

add to
1 package (the rectangular frozen stuff) chopped spinach

2 teaspoons garlic powder

1 teaspoon onion powder

2 teaspoons basil

salt and pepper to taste


Now, you can place about 1 cup of tomato sauce on the bottom of your casserole pan and begin stuffing your shells.

I top with more tomato sauce and some nutritional yeast. Bake for like 35-40 minutes - or until it's very hot @ (lemme check my notes, I believe it's 400 degree).

Will post the other recipe in a bit when the baby is more settled.

The above recipe uses a lot of processed stuff, but it's so good I have to make it periodically.
