The birthday party is in two days! Menu help?

Good thing I got everything ahead of time because now we're really pinching pennies for this trip for Jack's treatment.

So - I tend to buy boneless skinless chicken breasts from Whole Foods in the big family packs and break them down - those are in the freezer. I think I have six packs of six. I also have gobs of canned/veg baked beans.

I'm thinking of doing the chicken, shredded, with barbecue sauce on sandwiches and probably baked beans with brown sugar and molasses.

What else?

Our CSA has unlimited cherry tomatoes this week, plus sweet onions, zucchini, summer squash, peppers, potatoes, cantaloupe, and watermelon. I may get a watermelon, but I don't think it will be very big based on what we've seen this year so far.

She also had a sign up that said they'd have organic sweet corn for sale - so I'm planning to buy that and do corn on the cob for the party if there is enough. We'll have nearly 50 people total.

do a cherry tomato, basil and mozzarella salad? And then maybe a green salad of some sort and call the food done? You COULD do potato salad too, but it isn't necessary imo

bbq chic, baked beans, corn and salads sound great to me, and maybe a fruit salad if you are feeling led-- watermelon and cantelope make a cood base. You can add pineapple and pretty much anything else. Do a cream cheese dip for it if you are feeling frisky

I may just do sliced watermelon, depending on how big it is. Triangles.

potato salad sounds like it would be well-received. I made tomato mozzarella salad last time and my uber-adventurous family didn't like it. poor unfortunate souls.

Oh - I'm going to make a carrot cake for Jack - in the horseshoe pan - but I need an interesting cupcake. I don't want standard yellow/white/chocolate. Any ideas?

If you pound the chicken breasts with a tenderizer (sp?) they will go twice as far and I swear, no one notices! I got this idea from Sarah, and then used it at a few of my own parties and I have even had people tell me how great it was because they had a chicken breast sandwich that wasn't too thick.

You can always go with a huge bowl of Annies shells and cheese (the WI chedder is the best). that would make kids like mine happy. (Dh too. )

I wish we could. The curse of being a one-car family. I can't take dh to work and use his truck because he actually uses the truck at work.

Put onions, zuccini, summer squash, & peppers cut up on a cookie sheet. Drizzle w/ olive oil, add salt, pepper, & basil. Cook 400 deg. for 10 min.

You could do a tossed salad or spinach salad.

And a watermelon & cantalope fruit salad.

That's what I'm making for the party we're having this weekend. I'm making spinach salad w/ strawberries, red onion, cucumbers, & toasted almonds w/ poppy seed dressing.
You could just do romaine w/ cherry tomatoes. Y
ou could also cut them up and do a salsa & chips.
You could also do coleslaw, macaroni salad (w/ tomatoes!), potato salad...

You could also make a pico de gallo from the cherry tomatoes, onions, cilantro, and some lime. Yum...

That cupcake blog is awesome! Thanks for the link. I may gain 10# just looking at it though! lol!
