Menu Plans for 4/15-4/22 *ADD YOURS*
I actually sat down and menu planned today. I don't think I have done that in about 2 months.
Monday:
B Granola and fruit plate
L Leftover Taco's and cucumber
D Sesame Chicken Tenders and oven roasted red taters and asparagus
Tuesday:
B Cereal and Fruit Plate
L No need to plan because I will be out of town and kids will be at neighbors
D Grilled hamburger patties, grilled zuchini, and fruit plate
Wednesday:
B Pancakes and scrambled eggs
L Mac and Cheese with Tuna mixed in and raw veggie plate
D Corn and Bean Quesadillas, chips and homemade Pico de Gallo, salad & fruit
Thursday:
B Scrambled eggs, toast, and fruit
L Leftover Quesadillas, fruit plate, and salad
D Roast checken, mashed taters, and glazed carrots
Friday: (My B-Day)
B Omelets and fruit plate
L Butternut squash soup, salad, and fruit plate
D Chicken Enchiladas and steamed cauliflower, brocc., and red peppers
Saturday: (first soccer game)
B Cereal and fruit plate
L Grilled cheese and tomato soup
D Grilled pizzas, salad, and fruit plate
Sunday:
B Waffles, sausage, eggs, and fruit plate
D ?
I also plan to make oatmeal muffins and banana bread for snack and might make some fruit juice jigglers using knox gelatin

Today I will cherish myself, love myself, nurture myself, and take one more step towards achieving my goals!
What can I make that my non-veg aunt who eats really bland food (and not tomatoes) with no freaking fiber will like? I have tons of cage-free eggs I got on manager's special for $1 a dozen. So I'm thinking we'll have one night with quiche, one lunch of egg salad, and one or two scrambled egg breakfasts. Homemade mac n cheese one night.
I had a menu plan based on what I had in the pantry, but my mom brought over a ton of groceries yesterday, so I need to reevaluate.
Here goes:
Monday
B: Fruit salad, toast, yogurt
L: Hot dogs, carrot sticks and smoothies
D: Chili and cornbread
Tuesday:
B: Farmer's breakfast (scrambled eggs with whatever is on hand, in this case sausage, spinach and potatoes)
L: Bean soup and crackers
D: Black bean and beef enchiladas, mexican slaw
Wednesday:
B: Fruit salad, toast, scrambled eggs
L: Veggie sandwiches, yogurt, raisins
D: Lemon dill turkey meatballs with spaetzle and green beans
Thursday:
B: Oatmeal and raisins
L: Grilled cheese with tomato, bean soup
D: Pizza and salad
Friday:
B: Yogurt, fruit, banana muffins
L: Veggie sandwiches, crackers and cheese
D: Chicken and dumplings, carrots
Saturday:
B: Waffles, bacon and applesauce
L: out w/dad
D: Smoked pork chops, sweet and sour cabbage, spaetzle
Sunday:
B: ?
L: Picnic w/ mom
D: at mom's

I am adding them day by day... becuase right now I plan the next days meals with the things I have on hand, the night before.
Tomorrow (4-17) (My MIL's birthday... remember to have the kids call her and wish her Happy Birthday)
Breakfast: Peaches and Oatmeal with maple syrup
Lunch: Cheesey Garden Burgers on WW rolls with left over turnip chips
Dinner: Rice pilaf chicken bake and Garlic Roma Beans
I have it all set out. I have everything I need for it already in my house.
I need a few small things from the store tomorrow night when Don gets home:

Well, not for the whole week, but for the next few days, anyway. Today, I made oatmeal for breakfast, Indian black-eyed peas for lunch (from the "I Love Indian food" thread in Super Crunch), and curry from Val's curry recipe from the "creative meals" thread here. I'm working on a bigger plan...I feel like I'm finally starting to get back on track.
