Yummy freeze ahead burrito recipe

I have posted this recipe before but since everyone is getting geared for school and work lunches I thought it was a good time to post again. The original recipe is from allrecipes.com http://vegetarian.allrecipes.com/az/...tatoBurrit.asp

Don't let the sweet potato weird you out. It is a great addition to the burrito

Here is how I have tweaked the recipe to add ing. that we liked and also to lesson the bean portion because it makes about 3 times to many beans in my opinion (if you have left over bean mixture it is a good tortilla chip dip.

3-4T. water
1/2 onion, chopped
2 cloves garlic, minced
3 cups black beans, drained and rinsed
1 cups water
1.5 tablespoons chili powder
1 teaspoons ground cumin
2 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
1 1/2 tablespoons soy sauce
4 cups cooked and mashed sweet potatoes (sometimes I use refried beans)
16 (10 inch) flour tortillas, warmed
8-12 ounces shredded Cheddar cheese
salsa
1 1/2 c. brown rice

DIRECTIONS if eating immediately:
Preheat oven to 350 degrees F (175 degrees C).
Heat water in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.
Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese, salsa, and brown rice. Fold up tortillas burrito style, and place on a baking sheet.
Bake for 12 minutes in the preheated oven, and serve.

Directions if freezing:

Place baking sheet in freezer and flash freeze burritos. When frozen wrap in wax paper or plastic wrap and then place several in a freezer bag.

To eat, remove from freezer and thaw for an hour or so. When thawed either microwave for a couple of minutes or bake at 350 degrees for 12-15 min.
Bake for 12 minutes in the preheated oven, and serve.
