cheese freezing

How do you freeze cheese properly?

I have frozen cheese before, but it was never really sucessful. I did a mild chedder block, which i cut into half before freezing. The frozen cheese when i got it out of the freezer was mushy on the outside and molded VERY quickly.

I've heard you have to grate/shred it to freeze it well. This would make sense because you'd have more surface area and it would freeze evenly. And as a plus you could just thaw out a handful or two at a time if you wanted. But try it out with a small amount first so you're not wasting tons of money in your frugal efforts! And let us know how it goes.

I freeze grated cheese all the time and have never had a problem!

Here is what I do

I grate it and then flash freeze it on a cookie sheet before transferring it to a freezer container. This keeps it from clumping together.
