OK, the menu accountability thread got me started. I will fail dramatically in the grocery challenge for February, because I'll be buying a ton of meat and some other supplies that should last us beyond next month. Beware

: you will see a lot of meat here. DH freaks out if there's not meat on our table and refuses to eat beans. I have made myself feel better with this menu plan. I can buy about 50lbs of various meats (cut up chicken, hamburger, porkchops, round steak, chuck roasts) for $115 from a local farmer who grows humanely treated, grain-fed stock, no hormones, minimal antibiotic use. Not organic, but better than what we've been eating. This should last us well into April, if not until May.
I hope to make everything from scratch and sometimes double-batch give myself a safety net when dinner is just not gonna happen (KWIM?!). I am also going to try to up the veggies even more than noted here. During the days, and in DS#1's lunches, I hope to continue to to focus on a more vegetarian diet, since we will eat plenty of meat at dinner

Oops, I also may need to shuffle things around for Lent. If anyone has ideas for easy veggie meals that kids will like?

Saturday Breakfast: oatmeal, eggs, whatever Lunch: white chili and bread Dinner: Turkey, stuffing, mashed potatoes
