Ok - I'm wanting to grow all my root vegetables this summer, because I can't afford organic. Now, I use a lot of carrots/potatoes in my stews. We live off of these suckers, so I'm not sure how to store all the carrots and potatoes. Casey will not be making me a root cellar - if we get the house we want, we'll be doing a lot of other work on it, and won't have time for that just yet.

Canned carrots and potatoes taste yucky imo. Can you freeze them, or am I nuts? What do you suggest? Thanks!

I would suggest spacing the planting of your carrots so they are not all ready at the same time.

The trick to eating organically is to eat is season esp. with the veggies that don't store so well.
