We use leaves, covered with mulch hay. Except for the asparagus- that gets grass clippings.

mulch to help plants survive the winter or mulch to enrich the soil?

not much here in the vegie bed to overwinter. All gets tilled under at the end of fall with a couple of inches of fairly well composted manure/hay. Will get re-tilled in the spring. Still hoping to move to till-free system but soil not ready for it yet.

Plant some winter rye for a cover crop. That will put nutrients back into your soil.

leaves,grass clippings,clear out the compost so its empty, and ready to be filled again when the ground is frozen !!
