I think it's Sara Moulten's basic pizza dough recipe - which is enough for 2 very large family size calzones or pizzas on a pampered chef large pizza stone.
I make calzones all the time. I put ragu spag. sauce (cheaper than pizza sauce and tastes better IMO) in with pepperonni, onions, mush, motz cheese and ricotta cheese. Then I fold over, make sure to pinch the edges really tight!! Then I baste the top with olive oil, sprinkle with italian seasons and parmasan cheese and then bake. I also make another calzone which is killer, which is articokes, spinach and ricotta.
1 whole small container ricotta cheese
1 small package frozen spinach - thawed and drained well
1/2 onion
1 jar marinated articokes
1 egg
1-2 handfulls of motz. cheese
basil and salt to taste
1/2 c. good quality grated parmasian cheese (not kraft)
mix well and stuff calzones, chicken breast - whatever - it's yummy!
