homemade granola bar recipe please :)

I see so many doing a google search but Id love a tried and true. It cant have nuts in it and my ds hates dried fruits so it makes it a bit more challanging. ANyone?

I've had great results from this one, as well as several different modifications of it: Chocolate Chip Granola Bars | WholeFoodsMarket.com

The first four ingredients work on their own, and then you can choose to add anything else if you want.

I got this recipe off ParentsPlace Frugal Families long ago.

I have vegan recipe substitutes noted for those of you who are vegans.


Granola Bars

1 cup brown sugar
1/2 cup butter or margarine, softened (or you can substitute 1/2 cup vegetable oil)
2 Tbsp. Honey (you can omit this for a vegan version)
1/2 tsp. vanilla
1 egg (or you can substitute 1/4 cup water with one teaspoon apple cider vinegar for the egg for a vegan version)
1 cup flour
1 tsp cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cups rolled oats
1 1/4 cups crispy rice cereal
1/2 cup wheat germ (optional)
1 cup chocolate chips (you can use vegan ones if you want a vegan version)

Mix all together and press into a sheet pan.
Bake at 350 degrees for around 25 minutes
Let cool and cut

May also add things like
coconut
peanut butter
nuts
raisins, dried apples, apricots


I actually use ground flax seed meal in place of the wheat germ and often put smashed other boxed cereals like cheerios, etc in place or combined with the crispy rice.
You will get a feel for your oven and how much moisture you want in them with practice.

The children love them. I can't bear to buy packaged ones after these!

Here's the recipe we use regularly:

1 cup brown sugar
1/4 cup sugar
1/2 cup butter, softened
2 Tbsp. honey
1/2 tsp. vanilla
1 egg
1 cup flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 cups rolled oats
1 1/4 cup crispy rice cereal
1/2 cup wheat germ
1 cup chocolate chips (or you can use coconut, 1/2 cup peanut butter, 1/2 cup nuts, raisins, dried fruit, 1/2 cup fruit preserves)

In a large bowl, cream sugars and butter until fluffy. Add honey, vanilla and egg. Mix well. Blend in flour, cinnamon, baking soda and salt. Stir in remaining ingredients. Press firmly into the bottom of a greased 9 X 13" pan. Bake at 350 degrees for 20-25 minutes. Bars will firm as they stand. Cool and cut into bars. Save the crumbs for yogurt or ice cream topping. Makes approx. 24 bars.

I know there's atleast one other mama who makes these here on Amity's.
