Manicotti seems to freeze well. I made a huge batch a few months ago and froze several small casserole dishes full. Worked great.

This is a great ideas thread. I have a friend who is having her second baby, she already has all the stuff she needs for the little one so we will be having a "Diapers and Dinners" baby shower for her. Everyone will be bringing a dinner she can freeze and easily prepare the first few weeks after she comes home.

Meatloaves almost always freeze well. Salmon croquettes also freeze, uncooked, very well.
