Bisquick has too much junk in it, so I am on the search for a tried and true pancake and waffle recipe. Have one you'd like to share?

Waffle mix:
3 eggs, beaten with
3/4 cups vegetable oil
3/4 tsp salt
1-1/2 Tbsp sugar
4 tsp baking powder (not baking soda)
2-1/4 cups milk
2-1/2 cups flour
Serves about 6 waffles (this depends greatly on your waffle iron)

AMISH PANCAKES
2 1/2 C. sifted flour
1 tsp. salt
3 Tbsp. baking powder
1/2 C. sugar
sift these ingredients together, then, add:
2 eggs
5 Tbsp. oil
1 Tbsp. vanilla
2 C. milk
Fry on a hot griddle. Serve with fresh butter and pure maple syrup. Makes a bunch!

SImple. There are a million recipes for different quantities and such, but basically, it's flour and some leavening ingredients.
so, for a family breakfast, you can get away with 2 cups flours, , pinch salt, 1 tsp baking powder. You can add water or a milk, yogurt etc, plus an egg or two to the mix until it is the consistency you want.
that's it.
If you want to have some on hand in jar, here's a quantity recipe.
2 cups dry buttermilk powder
8 cups flour (you could use any flour- unbleached white and whole wheat, or whole wheat pastry flour- whatever combination)
bit of sugar or sucanat (up to half cup, but this is not needed ime) but if your kids are used to bisquik you might want to add this at frst and then lessen it as time goes by...or not. :-)
8 teaspoons baking powder
4 teaspoons baking soda
2 teaspoons salt
In a large bowl combine all ingredients. Stir with a wire whisk until evely distributed. Pour into a glass conatiner with a tight fitting lid. Store in a cool dry place (I put mine in the fridge). Use within 6 months (mine doesn't last that long with 4 kids lol) . Makes about 10-12 cups.
When I make pancakes or waffles, I try to up the nutrition by adding yougurt and/or eggs. I find adding water instead of milk makes a better pancake- but a good milk can up the nutrition count even more.

1 1/4 cup unbleached flour
1/4 cup sugar
1 teaspoon baking soda
1 1/2 teaspoons cream of tartar
1 large egg
3/4 cup milk
Sift together dry ingredients and blend in the egg and milk. Drop by tablespoon onto hot griddle. When bubbles appear turn the pancake.
My children <and their friends!> really enjoy these pancakes. :)
Yup, Bisquick is gross. I always use the simple pancake recipe from the Joy of Cooking and they come out perfect everytime.
