Chicken Quesidillas

4 boneless, skinless chicken breasts, cubed
4 (10") flour tortillas
2 cups shredded cheeses (your choice: cheddar, monterrey jack, colby, mozzarella, etc...or a mix!)
1 envelope chicken taco seasoning
1 jar taco sauce (or salsa)
Optional: Sour cream; chiles, black olive slices

Cook chicken according to chicken taco mix directions. Preheat oven to 450 degrees. On a cookie sheet, place one tortilla, sprinkle 1/4 cup of the cheese(s), top with chicken mixture, then 1/4 cup more of the cheeses, and top off with the 2nd torilla. Repeat for 2nd quesidilla. Bake for 5-7 minutes or until cheeses have melted and tortillas have browned a bit. Top with extra toppings if you wish. Cut with pizza cutter into 6 pieces for each quesidilla.

Yield: 4 servings.
