NOTE:
All of these are easy to change...use ground turkey instead of ground beef, change a side-dish, replace one ingredient with another.....(salsa in place of pasta sauce, one veggie for another, etc).
It took me @ 8 hours to do yesterday. And with the exception of I think 3 recipes, I've tried every one of them! AND I realize that we'll be eating leftovers @ 2 nights of the week, but at my house, leftovers are dh's lunches for work.

6 Week Menu
The Recipes
Note: MANY of these recipes can be adapted for non-meat eaters! Just tweak each recipe to suit your family and their tastes!
#1 Meatloaf Muffins:
1 lb ground beef
½ cup breadcrumbs
1 egg
1 packet of onion soup mix
Preheat oven to 350 degrees. Spray a muffin pan with veggie oil spray. In a medium bowl, combine all ingredients well. Press mixture evenly into muffin cups. Bake for 25-30 minutes or until no longer pink inside. Let stand 2 minutes before removing from pan.
Perfect portions and faster cooking! Great for freezing!
#3 Georgian Chicken Salad
4 big heads of fresh broccoli or 1-2 bags of frozen broccoli florets (JUST THE FLORETS!)
1 cup chopped and diced celery
2-3 cups cooked, chicken (cubed or shredded) (I usually boil a 1-2 lb fryer chicken and use the meat from it)
12 ounces cooked fettucini noodles
1 small can sliced black olives
DRESSING:
1/2 cup red wine vinegar
1/2 cup veggie or olive oil
1 HEAPING tsp of dried basil
1/3 cup grated parmesan cheese
Chop only the flowers from the broccoli head, the TINIEST Of flowers. In a large bowl, add broccoli, celery, chicken and black olives and cooked fettuccini noodles. In a separate bowl mix the ingredients for the dressing. Mix all ingredients into the first bowl and toss well. Good even the day after! Eat cold OR hot!
#4 Chicken Soup
1 whole fryer chicken (1.5-3 lbs)
8-12 ounces of pasta or rice, cooked separately, warm.
10 Chicken boullion cubes
pepper, sage, thyme to taste
2 cups total of veggies (corn, carrots, peas, greenbeans, celery, etc)
In a large pot boil the fryer chicken (usually 45-60 minutes). When cooked thoroughly, remove chicken carefully and let cool. Pick off all meat and set aside. SAVE THE BROTH from boiling the chicken! Skim off the scum and fat. In a separate pot, cook your pasta or rice. (if you cook it IN the soup it will make it a stew...the starch will thicken it a LOT!). Now, on medium heat, return the broth to a heated simmer. Add the spices, chicken, veggies, boullion cubes and pasta/rice. Continue to simmer for 30 minutes or until boullion cubes have dissolved and the spices have blended well. Enjoy!
#5 Baked Chicken
4 bone-in split chicken breasts (or other chicken parts) @ 1.5 lbs
1 tsp EACH garlic salt, onion salt and italian seasoning
Preheat oven to 350 degrees. Lightly spray with veggie oil a 13 X 9 pan. Under cold water wash chicken off and pat dry. Place skin side up in pan. Sprinkle with remaining ingredients. Bake in oven for 30 minutes or until juices run clear when pierced.
#6 Crockpot Chicken Dinner
3 medium potatoes cleaned and cut into cubes
3 large carrots cleaned and cut into coins
3 or 4 bone in split chicken breasts (or @ 1.5 lbs other parts!)
Chicken boullion cubes and water OR chicken broth
In crock pot on LOW, layer veggies first, then chicken. Add broth to BARELY covering the top of the chicken (remember that the chicken will give off it’s own juices and you don’t want it to overflow!). Cover and simmer on low for 8 or more hours.
#7 Meatballs
1 lb ground beef
½ cup breadcrumbs
1 egg
1 packet of onion soup mix
Preheat oven to 350 degrees. Spray a baking sheet/cookie sheet with veggie oil spray. In a medium bowl, combine all ingredients well. Roll into walnut sized balls. Place 2” apart on baking sheet. Bake for 15 minutes or until no longer pink inside. Let stand 2 minutes before removing from pan. Great for freezing!
#8 Chicken Stir-Fry with rice
2 cups precooked rice, warm
1 lb boneless chicken, cut into 1” cubes
(can use leftover cooked chicken, too!)
¼ cup peas
¼ cup broccoli florets
¼ cup grated carrot
1 tbsp finely diced onion
¼ cup teriyaki sauce
1 tbsp veggie/olive oil
In a large saute/frying pan on medium heat, warm up the oil. Cook chicken until JUST done. Add veggies and cook to desired consistency. Serve this over the rice and pour the teriyaki over the top. Enjoy!
#10 Shake and bake Chicken
1-2 lbs chicken parts (drums, thighs, breasts, etc)
Make your own shakenbake mix:
1 cup bread or cracker crumbs (finely crushed!)
1 tbsp paprika
4 tbsp season salt
4 tbsp flour
salt and pepper
Preheat oven to 350 degrees. Lightly spray 13 X 9 pan with veggie oil spray. Mix together dry ingredients. Wash off chicken parts and shake off excess water. In a large plastic bag, pour the dry ingredients in. Add a few pieces of chicken at a time, shake to coat.
When finished, throw away the remaining mixture. (DO NOT REUSE!) Bake chicken 30-45 minutes or until juices run clear when pierced.
#11 Pizza Soup
1lb ground beef
2 cans tomato soup (the condensed or undiluted kind)
1 jar spaghetti sauce (28 ounces)
1 tbsp italian seasoning
2 cups shredded cheddar cheese
6.5 cups water
Brown ground beef, drain. Add 2 cans tomato soup, spaghetti sauce, 1 tbsp italian seasoning and 6.5 cups water. Stir well. Bring to boil stirring occasionally. Reduce to simmer *uncovered*.
RIGHT before serving add all 2 cups shredded cheddar cheese and stir until melted.
Add cooked macaroni for a heartier stew!
#12 Bretzel Shack Potatoes
4 large baking potatoes
½ lb ground beef and 2 tbsp finely diced onion, cooked and drained
1 cup shredded cheese
¾ cup sour cream
4 tbsp butter
salt & pepper
Preheat oven to 400 degrees. Wash potatoes and pierce each 2-3 times. Bake for an hour or until done. Cut open and using a fork and knife, cut up the insides of the potato. Top with butter, salt and pepper, then shredded cheeses and sour cream. Enjoy!
#13 Shepard’s Pie
1 lb ground beef
2 cups whole kernel corn
3 cups mashed potatoes
1 can of brown gravy (or 3 packets)
butter
salt and pepper
Preheat oven to 350 degrees. Lightly spray a 13 X 9 pan or casserole dish with veggie oil spray. In a frying pan, brown ground beef and drain. Make mashed potatoes. Layer the ingredients as follows: ground beef, gravy, corn and mashed potatoes. Place a few pats of butter on top to help potatoes brown. Bake for 30 minutes or until bubbly.
#13 Easy Chili
1 can/bottle of pasta sauce
2 cans red kidney beans (optional)
1-1.5 lbs of ground beef/chicken or turkey
1 onion, finely chopped
2 packets chili seasoning (or 2 tsp cumin and 3 tsp chili powder)
In a large soup pot, brown meat and onions. Drain fat well. Add remaining ingredients and simmer for 1 or more hours.
#15 Tuna Noodle Casserole
2 cans tuna
mayo
1 pkg egg noodles (or whatever you'd like to use)
1 8-16 ounce brick of cheese, shredded or grated
1 1/2 cups of veggies (we use peas and corn)
Preheat oven to 350 degrees. Spray casserole dish or 13 X 9 pan with cooking oil spray.
Boil and drain noodles.
Drain water from tuna and add mayo just like you'd normally make tuna for sandwiches.
In the casserole dish, mix the noodles, tuna mixture, the veggies and some grated cheese. Then layer tuna noodle mixture, cheese, tuna noodle mixture, cheese, tuna noodle mixture and a layer of cheese on top. Bake @ 15 minutes or until warm and cheese is bubbly. You can then turn on the broiler and *toast* the top of the casserole a bit.
#16 Fettuccini alfredo with chicken
12 ounces fettuccini noodles, cooked.
4 boneless chicken breasts, cut into 1” cubes and cooked until no longer pink inside
Alfredo sauce:
1 pint heavy cream
1/2 cup (1 stick) butter, softened
1 cup grated parmesan cheese
Pepper to taste
Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with black pepper. Add cooked pasta to the saute pan, gently toss the noodles to coat in the alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately.
#17 Chicken Piccatta
4 boneless, skinless chicken breasts, pounded flat (aka cutlets)
2 tbsp flour
2 tbsp veggie/olive oil
¾ cup chicken broth, separated into ¼ and ½ cups
1 tsp minced garlic
2 tbsp lemon juice
2 tbsp butter
1 lemon, sliced
Season cutlets with salt and pepper, then dust with flour. Spray saute/frying pan with veggie oil spray. Add oil to pan and over medium-high heat saute cutlets for 2-3 minutes on the first side, flip over and saute for another 1-2 minutes on the 2nd side with the pan *covered. Transfer cutlets to a warm plate and pour off fat from pan. Add ¼ cup chicken broth and the garlic to the pan and cook until garlic is slightly brown and liquid is nearly gone, @ 2 minutes. Add rest of broth and lemon juice. Return cutlets to the pan and cook on each side 1 minute. Transfer cutlets back to warm plate. Add butter and lemon slices to the pan. Once butter melts pour sauce over the cutlets.
#17 Herbed Potatoes
STEAM 4 large potatoes (red or white), halved, skin on, until done, @ 15 minutes.
Toss potatoes in 2 tbsp melted butter, 1 tsp chopped parsley and 1 tsp chopped chives. Salt to taste.
#18 Homemade pizza
Pizza dough: (for use with bread machine...adapt for those without)
This recipe makes 1 large or 2 12" pizza's.
Using your bread machine, pour the ingredients in the
order listed into it.
1 cup of warm milk (any kind, or water will do)
2 tbsp honey (I add more to make it sweeter)
2 tbsp veggie oil (I use olive oil)
1 tsp minced garlic
1/2 tsp garlic salt (table salt will do, as well!)
1 tbsp each of Parsley, Basil and Oregano
2 1/2 cups of bread machine flour (bread flour)
1 1/2 tsp yeast
Optional: 1 tbsp gluten
When all ingredients have been added, put your bread
machine on *manual* or *dough* cycle. Keep an eye on
it for a few minutes....if too dry add drops of
water/if too wet add a few pinches of bread flour.
When bread machine cycle is over, divide dough into to
parts (for 2 12" pizza shells). Roll out dough and
put on lightly floured pans/stones. Let rise again.
Preheat oven to 500 degrees farenheit.
Lightly brush dough edges with oil. Add sauce and
toppings of your choice. Bake for 7-12 minutes or
until it reaches desired doneness.
#19 Hot dogs in a blanket
1 pkg hotdogs
2 rolls of refridgerated biscuits
Follow directions on cans of biscuits to preheat oven. Cut hotdogs in quarters lengthwise and then in half the other way. Roll hotdog pieces one per biscuit. Place 2” apart on cookie/baking sheet. Bake as directed!
#19 French Fries
3 lg potatoes, unpeeled and cut into 3/8th” strips.
1 ½ tbsp veggie/olive oil
Season Salt
Heat oven to 425 degrees. Spray large cookie/baking sheet with veggie oil spray. Place potatoes into a large plastic zipper bag with oil. Shake until well coated. Arrange in a single layer on the cookie sheet. Bake for 15 minutes. Carefully flip fries over and sprinkle lightly with season salt. Bake an additional 5 minutes or until tender. If desired, broil for 1-2 minutes for additional browning.
#21 BBQ in a crockpot
2-3 lbs chicken pieces
1 16 oz bottle of BBQ sauce
Place chicken at bottom of crockpot and pour bbq sauce on top. Stir will. Cover and cook 6-8 hours or longer on low. Meat should be tender and fall off bone. For hot chicken, add hot sauce!
OPTIONAL: Use beef/pork ribs in place of the chicken!
#24 Sloppy Joes
1 lb ground beef
1 28 oz can of spaghetti sauce
1 packet sloppy joe seasoning
Hamburger rolls
Optional: cheese
Brown beef and drain off fat. Add spaghetti sauce and sloppy joe mix and cook for a few minutes. Top hamburger buns with sloppy joes mix, top with cheese and enjoy!
#25 Corn Chowder
2 tbsp butter
1 finely diced small onion
2 cans creamed corn
1 can whole kernel corn
2 cans milk
4 medium potatoes, peeled and cubed, cooked separately
salt and pepper to taste
In a large pot over medium heat , melt butter and add onions. Cook until onions have softened. Next add 2 cans of whole kernel corn. Fill both cans up with milk and add the milk, too. Then add the potatoes and salt and pepper to taste. Turn heat to low-medium and stir until warmed and reaches desired consistency.
#26 Hot dogs and Peppers
1 pkg hot dogs, cut in half lengthwise.
1 green pepper, top cut off, cored and cut into slices lengthwise.
In a large frying pan sprayed with cooking oil spray, and on medium heat, slowly cook hot dogs until browned and peppers until tender. You can serve as is or in a bun.
Optional: You can use keilbasa or knockwurst in place of the hotdogs!
#27 Pulled Beef sandwiches
Hamburger buns
2-3 pound beef roast
1 16 oz bottle of BBQ sauce
Cook on low in crockpot 6-8 hours. Shred meat and serve on hamburger rolls.

#29 Taco Casserole
1 lb ground beef
1 pkg taco seasoning
1 cup shredded cheese
1 box corn bread mix
(easily doubled!)
Toppings: lettuce, tomato, onion, etc
Preheat oven to temp on cornbread batter pkg. Make cornbread batter according to pkg. Brown ground beef and drain off fat, add the taco mix according to directions. When done, in a 9 X 9 pan, spread taco beef at bottom, top with cheese, then add cornbread mix to top. Bake according to directions for cornbread. Top with toppings when done!
#30 Nacho’s
1 small bag nacho/tortilla chips
(or make your own by frying up pieces of tortillas!)
1 lb ground beef
1 pkg taco seasoning
1 cup shredded cheese
Toppings: guacamole, sour cream, onions, black olives, etc
Preheat oven to 350 degrees. Lightly spray a cookie/baking sheet with veggie oil spray. Brown beef and drain off fat, prepare with taco seasoning packet as directions state. Put a layer of nacho chips on the cookie/baking sheet. Top with taco meat and cheese. Bake until cheese is melted and bubbly. Remove from oven and add toppings. ENJOY!
#31 Easy Lasagna
12 oz bag of egg noodles
1 lb ground beef
1 28 oz jar/can of pasta sauce
24 ounces cottage cheese
16 ounces sour cream
(or, in place of cottage cheese and sour cream, use 32 oz ricotta cheese!)
4 oz shredded mozzarella cheese
Preheat oven to 350 degrees. Brown ground beef and drain. Cook egg noodles until just done, drain. Mix noodles, cottage cheese, sour cream and ground beef. In a 9 X 13 pan, spread a layer of pasta sauce on bottom of pan. Spread a layer of the noodle/cheese/beef mixture. Alternate ingredients inlayers until all are used, ending with a sauce layer. Top with shredded cheese. Cover with foil and bake for 45 minutes. Then remove foil and bake an additional 10-15 minutes.
#32 Mommy Help
4 pkgs beef ramen noodles
1 can corn (or 1 cup leftover veggies)
4 cups water
1 lb ground beef
½ cup chopped onion
In a saucepan, brown the ground beef and onion until done and drain off fat. Add sauce packets from ramen noodles (only 2 of them, NOT all 4!) and the water. Break up the noodles and add to the pan with the veggies. Cook 5 minutes until noodles are done and most of water is absorbed.
Optional: You can use chicken and chicken ramen noodles instead!
#33 Chicken N Dumplins
2 lb fryer chicken or 2 lbs chicken parts
1 tsp salt
¼ tsp black pepper
1 can biscuits (8-10)
3 tbsp flour
1 cup COLD water
In a large pot boil the fryer chicken (usually 40 minutes). When cooked thoroughly, remove chicken carefully and let cool. Pick off all meat and set aside. SAVE THE BROTH from boiling the chicken! Skim off the scum and fat from broth. Salt and pepper broth to taste. Add chicken back INTO the broth. In a separate cup, mix flour and COLD water until smooth. While broth is boiling, SLOWLY add flour/water mixture and STIR CONSTANTLY while it thickens. Return to simmer. Cut biscuits into quarters. Drop into stew. Cook uncovered over low heat for 10 minutes. (remember to STIR once in a while so you don’t burn the stew to the bottom of the pot!) Cover and cook for an additional 10 minutes. Test dumplins with a toothpick, when it comes out clean they’re DONE!
Optional: Add veggies to make it a chicken and veggie stew!
#34 Chicken BEST!
2 ½ lbs chicken parts
1 envelope onion soup mix
½ tsp salt
¼ tsp thyme
1 tbsp garlic minced
2 cups chicken broth
1 small onion, quartered
2 tbsp chopped parsley
Place the chicken and onion into your crockpot. Mix together all remaining ingredients and pour into the crockpot. Cover and cook on low for 8 hours.
#35 Beef Noodle Casserole
1 lb ground beef
1 small onion finely chopped
1 pkg egg noodles
1 can condensed tomato soup
1/8 tsp black pepper
1 cup breadcrumbs
1 ¼ cups water
Preheat oven to 300 degrees. Lightly spray a 13 X 9 pan with veggie oil spray. Brown beef and onions in skillet, drain off fat. Cook noodles until done. Combine soup, water and pepper. Stir into cooked meat. Add cooked noodles to meat mixture. Stir carefully to avoid tearing noodles. Spoon mixture into the pan. Sprinkle bread crumbs over the top and bake uncovered for @ 30 minutes.
#36 BBQ cups
¾ lb ground beef
½ cup bbq sauce
2 tbsp brown sugar
1 tbsp finely minced onion
1 can biscuits
¾ cup shredded cheddar cheese
Preheat oven to 400 degrees. Brown beef in skillet and drain off fat. Add bbq sauce, brown sugar and onion. Place individual biscuits into muffin pan, ungreased, and press them out all around each muffin pocket (creating a cup to hold the filling). Put mixture into biscuits and top with cheese. Bake 10-15 minutes.
#37 Beef Stew
2 lbs beef stew beef (cut off excess fat!), cut into 1” cubes
¼ cup flour
½ EACH salt and pepper
1 ½ cups beef broth or hot water
4 carrots cleaned and sliced into coins
3 potatoes, cleaned and cut into chunks
1 stalk celery sliced
1 small onion, quartered
Put meat into crock pot. Mix flour, salt and pepper. Pour over meat and stir to coat meat with flour. Add remaining ingredients and stir to mix well. Cover and cook on low 10-12 hours. Stir thoroughly before serving.
#38 Lasagna Roll-ups
1 pkg of lasagna noodles
16 oz container of ricotta cheese
1 can/jar pasta sauce
4 ounces shredded mozzarella cheese
(You can add fresh steamed spinach to the sauce)
Gently boil noodles, cool slightly, spread filling on each noodle then spread a little sauce, roll & put in lightly greased 13 X 9 pan. Repeat repeat repeat. Pour remaining sauce over the roll-ups, sprinkle the cheese over them. Bake at 350 until cheese is melted to desired consistency.
#39 Kebobs: (NEEDS to marinate overnight!)
1-2 pounds of beef stew beef, fat cut off (or chicken)
1.5 cups soy sauce
2 tpsb minced garlic
1 cup pineapple juice
1 tsp each garlic and onion salts
Fresh veggies (cherry tomatoes, chunks of onion and green pepper, chunk pineapple, mushrooms, etc)
SKEWERS (metal or wooden, but NOT rounded or nothing stays on them).
In a bowl, mix together the soy sauce, minced garlic, pineapple juice and salts. Mix well. Then add the beef pieces and let marinate several hours or overnight for best results.
When ready to cook (grill or broil), put meat and veggies alternately on skewers. Grill or broil to perfection! SO good! DO NOT reuse the marinade!
#40 Italian Sausage Dinner
1 lb italian sausages (could be pork or turkey)
2 large green peppers, top removed, cored, cut into bite sized chunks.
1 large yellow onion, cut into bite sized chunks
1/2 cup water
1 jar (20-28 oz) of chunky salsa
1 1/2 tsp italian seasoning
1 tsp salt
Cut up italian sausages into bite sized pieces. Add sausages and water into a large frying pan. Bring to a boil, then reduce heat and cover. Cook until no longer pink inside. When done cooking, drain off water and fat. Add onion and green pepper into frying pan with salsa, italian seasoning and salt. Stir well. Cover and simmer 10-15 minutes or until veggies are tender. Serve with a fresh salad and rolls.
Option: You can make this with HOT sausage or regular sausage, too!
#41 Stuffed Green Peppers
4 green peppers tops cut off and cored.
1 lb ground beef/turkey or chicken, browned and drained
2 cups rice, cooked.
Brown gravy or tomato sauce
Preheat oven to 350 degrees. Use a bundt pan or two loaf pans (this keeps the peppers upright for cooking). Lightly spray with cooking oil spray (helps with cleanup). Mix browned meat and rice together with some salt and pepper or whatever spices you'd like. Place the mixture into the peppers. Cover with the brown gravy or tomato sauce. Bake 1 hour or until peppers are tender.
#42 Spaghetti with chicken sauce
8 to 12 ounces Spaghetti/pasta (cooked and drained)
1 28 oz jar/can pasta sauce
1 cup cooked chicken (shredded)
Cook pasta and drain. Warm pasta sauce, add chicken. Serve the chicken pasta sauce on top of the pasta.

***Cheese-Garlic biscuits (like the ones at Red Lobster!)
2 cups Bisquick baking mix
2/3 cup milk
½ cup shredded cheddar cheese
¼ cup butter melted
¼ tsp garlic powder
Preheat oven to 450 degrees. Mix baking mix, milk and cheese until soft dough forms; beat vigorously for 30 seconds. Drop dough by spoonfuls onto ungreased cookie sheet, 2” apart. Bake 8-10 minutes or until golden brown. Mix melted butter and garlic salt; brush over warm biscuits before removing from cookie sheet. Serve warm.
***1.5 lb loaf Honey White Bread
1 ¼ cup milk
3 tbsp butter
3 tbsp honey
3 cups bread flour
¾ tsp salt
1 ½ tsp active dry yeast
Heat milk to HOT and add butter and honey. Cool to room temperature. Add milk mixture and all remaining ingredients into your bread machine in the order listed above. Process on the basic bread cycle according to your bread machine’s manual. Use immediately or freeze.
***Italian Bread
1 cup water
1 ¼ tsp salt
1 tsp sugar
3 cup bread flour
1 packet (2 ½ tsp) yeast
Add ingredients into your bread machine as directed and process on the basic bread cycle according to your bread machine’s manual.
All of these are easy to change...use ground turkey instead of ground beef, change a side-dish, replace one ingredient with another.....(salsa in place of pasta sauce, one veggie for another, etc).
It took me @ 8 hours to do yesterday. And with the exception of I think 3 recipes, I've tried every one of them! AND I realize that we'll be eating leftovers @ 2 nights of the week, but at my house, leftovers are dh's lunches for work.

6 Week Menu
The Recipes
Note: MANY of these recipes can be adapted for non-meat eaters! Just tweak each recipe to suit your family and their tastes!
#1 Meatloaf Muffins:
1 lb ground beef
½ cup breadcrumbs
1 egg
1 packet of onion soup mix
Preheat oven to 350 degrees. Spray a muffin pan with veggie oil spray. In a medium bowl, combine all ingredients well. Press mixture evenly into muffin cups. Bake for 25-30 minutes or until no longer pink inside. Let stand 2 minutes before removing from pan.
Perfect portions and faster cooking! Great for freezing!
#3 Georgian Chicken Salad
4 big heads of fresh broccoli or 1-2 bags of frozen broccoli florets (JUST THE FLORETS!)
1 cup chopped and diced celery
2-3 cups cooked, chicken (cubed or shredded) (I usually boil a 1-2 lb fryer chicken and use the meat from it)
12 ounces cooked fettucini noodles
1 small can sliced black olives
DRESSING:
1/2 cup red wine vinegar
1/2 cup veggie or olive oil
1 HEAPING tsp of dried basil
1/3 cup grated parmesan cheese
Chop only the flowers from the broccoli head, the TINIEST Of flowers. In a large bowl, add broccoli, celery, chicken and black olives and cooked fettuccini noodles. In a separate bowl mix the ingredients for the dressing. Mix all ingredients into the first bowl and toss well. Good even the day after! Eat cold OR hot!
#4 Chicken Soup
1 whole fryer chicken (1.5-3 lbs)
8-12 ounces of pasta or rice, cooked separately, warm.
10 Chicken boullion cubes
pepper, sage, thyme to taste
2 cups total of veggies (corn, carrots, peas, greenbeans, celery, etc)
In a large pot boil the fryer chicken (usually 45-60 minutes). When cooked thoroughly, remove chicken carefully and let cool. Pick off all meat and set aside. SAVE THE BROTH from boiling the chicken! Skim off the scum and fat. In a separate pot, cook your pasta or rice. (if you cook it IN the soup it will make it a stew...the starch will thicken it a LOT!). Now, on medium heat, return the broth to a heated simmer. Add the spices, chicken, veggies, boullion cubes and pasta/rice. Continue to simmer for 30 minutes or until boullion cubes have dissolved and the spices have blended well. Enjoy!
#5 Baked Chicken
4 bone-in split chicken breasts (or other chicken parts) @ 1.5 lbs
1 tsp EACH garlic salt, onion salt and italian seasoning
Preheat oven to 350 degrees. Lightly spray with veggie oil a 13 X 9 pan. Under cold water wash chicken off and pat dry. Place skin side up in pan. Sprinkle with remaining ingredients. Bake in oven for 30 minutes or until juices run clear when pierced.
#6 Crockpot Chicken Dinner
3 medium potatoes cleaned and cut into cubes
3 large carrots cleaned and cut into coins
3 or 4 bone in split chicken breasts (or @ 1.5 lbs other parts!)
Chicken boullion cubes and water OR chicken broth
In crock pot on LOW, layer veggies first, then chicken. Add broth to BARELY covering the top of the chicken (remember that the chicken will give off it’s own juices and you don’t want it to overflow!). Cover and simmer on low for 8 or more hours.
#7 Meatballs
1 lb ground beef
½ cup breadcrumbs
1 egg
1 packet of onion soup mix
Preheat oven to 350 degrees. Spray a baking sheet/cookie sheet with veggie oil spray. In a medium bowl, combine all ingredients well. Roll into walnut sized balls. Place 2” apart on baking sheet. Bake for 15 minutes or until no longer pink inside. Let stand 2 minutes before removing from pan. Great for freezing!
#8 Chicken Stir-Fry with rice
2 cups precooked rice, warm
1 lb boneless chicken, cut into 1” cubes
(can use leftover cooked chicken, too!)
¼ cup peas
¼ cup broccoli florets
¼ cup grated carrot
1 tbsp finely diced onion
¼ cup teriyaki sauce
1 tbsp veggie/olive oil
In a large saute/frying pan on medium heat, warm up the oil. Cook chicken until JUST done. Add veggies and cook to desired consistency. Serve this over the rice and pour the teriyaki over the top. Enjoy!
#10 Shake and bake Chicken
1-2 lbs chicken parts (drums, thighs, breasts, etc)
Make your own shakenbake mix:
1 cup bread or cracker crumbs (finely crushed!)
1 tbsp paprika
4 tbsp season salt
4 tbsp flour
salt and pepper
Preheat oven to 350 degrees. Lightly spray 13 X 9 pan with veggie oil spray. Mix together dry ingredients. Wash off chicken parts and shake off excess water. In a large plastic bag, pour the dry ingredients in. Add a few pieces of chicken at a time, shake to coat.
When finished, throw away the remaining mixture. (DO NOT REUSE!) Bake chicken 30-45 minutes or until juices run clear when pierced.
#11 Pizza Soup
1lb ground beef
2 cans tomato soup (the condensed or undiluted kind)
1 jar spaghetti sauce (28 ounces)
1 tbsp italian seasoning
2 cups shredded cheddar cheese
6.5 cups water
Brown ground beef, drain. Add 2 cans tomato soup, spaghetti sauce, 1 tbsp italian seasoning and 6.5 cups water. Stir well. Bring to boil stirring occasionally. Reduce to simmer *uncovered*.
RIGHT before serving add all 2 cups shredded cheddar cheese and stir until melted.
Add cooked macaroni for a heartier stew!
#12 Bretzel Shack Potatoes
4 large baking potatoes
½ lb ground beef and 2 tbsp finely diced onion, cooked and drained
1 cup shredded cheese
¾ cup sour cream
4 tbsp butter
salt & pepper
Preheat oven to 400 degrees. Wash potatoes and pierce each 2-3 times. Bake for an hour or until done. Cut open and using a fork and knife, cut up the insides of the potato. Top with butter, salt and pepper, then shredded cheeses and sour cream. Enjoy!
#13 Shepard’s Pie
1 lb ground beef
2 cups whole kernel corn
3 cups mashed potatoes
1 can of brown gravy (or 3 packets)
butter
salt and pepper
Preheat oven to 350 degrees. Lightly spray a 13 X 9 pan or casserole dish with veggie oil spray. In a frying pan, brown ground beef and drain. Make mashed potatoes. Layer the ingredients as follows: ground beef, gravy, corn and mashed potatoes. Place a few pats of butter on top to help potatoes brown. Bake for 30 minutes or until bubbly.
#13 Easy Chili
1 can/bottle of pasta sauce
2 cans red kidney beans (optional)
1-1.5 lbs of ground beef/chicken or turkey
1 onion, finely chopped
2 packets chili seasoning (or 2 tsp cumin and 3 tsp chili powder)
In a large soup pot, brown meat and onions. Drain fat well. Add remaining ingredients and simmer for 1 or more hours.
#15 Tuna Noodle Casserole
2 cans tuna
mayo
1 pkg egg noodles (or whatever you'd like to use)
1 8-16 ounce brick of cheese, shredded or grated
1 1/2 cups of veggies (we use peas and corn)
Preheat oven to 350 degrees. Spray casserole dish or 13 X 9 pan with cooking oil spray.
Boil and drain noodles.
Drain water from tuna and add mayo just like you'd normally make tuna for sandwiches.
In the casserole dish, mix the noodles, tuna mixture, the veggies and some grated cheese. Then layer tuna noodle mixture, cheese, tuna noodle mixture, cheese, tuna noodle mixture and a layer of cheese on top. Bake @ 15 minutes or until warm and cheese is bubbly. You can then turn on the broiler and *toast* the top of the casserole a bit.
#16 Fettuccini alfredo with chicken
12 ounces fettuccini noodles, cooked.
4 boneless chicken breasts, cut into 1” cubes and cooked until no longer pink inside
Alfredo sauce:
1 pint heavy cream
1/2 cup (1 stick) butter, softened
1 cup grated parmesan cheese
Pepper to taste
Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with black pepper. Add cooked pasta to the saute pan, gently toss the noodles to coat in the alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately.
#17 Chicken Piccatta
4 boneless, skinless chicken breasts, pounded flat (aka cutlets)
2 tbsp flour
2 tbsp veggie/olive oil
¾ cup chicken broth, separated into ¼ and ½ cups
1 tsp minced garlic
2 tbsp lemon juice
2 tbsp butter
1 lemon, sliced
Season cutlets with salt and pepper, then dust with flour. Spray saute/frying pan with veggie oil spray. Add oil to pan and over medium-high heat saute cutlets for 2-3 minutes on the first side, flip over and saute for another 1-2 minutes on the 2nd side with the pan *covered. Transfer cutlets to a warm plate and pour off fat from pan. Add ¼ cup chicken broth and the garlic to the pan and cook until garlic is slightly brown and liquid is nearly gone, @ 2 minutes. Add rest of broth and lemon juice. Return cutlets to the pan and cook on each side 1 minute. Transfer cutlets back to warm plate. Add butter and lemon slices to the pan. Once butter melts pour sauce over the cutlets.
#17 Herbed Potatoes
STEAM 4 large potatoes (red or white), halved, skin on, until done, @ 15 minutes.
Toss potatoes in 2 tbsp melted butter, 1 tsp chopped parsley and 1 tsp chopped chives. Salt to taste.
#18 Homemade pizza
Pizza dough: (for use with bread machine...adapt for those without)
This recipe makes 1 large or 2 12" pizza's.
Using your bread machine, pour the ingredients in the
order listed into it.
1 cup of warm milk (any kind, or water will do)
2 tbsp honey (I add more to make it sweeter)
2 tbsp veggie oil (I use olive oil)
1 tsp minced garlic
1/2 tsp garlic salt (table salt will do, as well!)
1 tbsp each of Parsley, Basil and Oregano
2 1/2 cups of bread machine flour (bread flour)
1 1/2 tsp yeast
Optional: 1 tbsp gluten
When all ingredients have been added, put your bread
machine on *manual* or *dough* cycle. Keep an eye on
it for a few minutes....if too dry add drops of
water/if too wet add a few pinches of bread flour.
When bread machine cycle is over, divide dough into to
parts (for 2 12" pizza shells). Roll out dough and
put on lightly floured pans/stones. Let rise again.
Preheat oven to 500 degrees farenheit.
Lightly brush dough edges with oil. Add sauce and
toppings of your choice. Bake for 7-12 minutes or
until it reaches desired doneness.
#19 Hot dogs in a blanket
1 pkg hotdogs
2 rolls of refridgerated biscuits
Follow directions on cans of biscuits to preheat oven. Cut hotdogs in quarters lengthwise and then in half the other way. Roll hotdog pieces one per biscuit. Place 2” apart on cookie/baking sheet. Bake as directed!
#19 French Fries
3 lg potatoes, unpeeled and cut into 3/8th” strips.
1 ½ tbsp veggie/olive oil
Season Salt
Heat oven to 425 degrees. Spray large cookie/baking sheet with veggie oil spray. Place potatoes into a large plastic zipper bag with oil. Shake until well coated. Arrange in a single layer on the cookie sheet. Bake for 15 minutes. Carefully flip fries over and sprinkle lightly with season salt. Bake an additional 5 minutes or until tender. If desired, broil for 1-2 minutes for additional browning.
#21 BBQ in a crockpot
2-3 lbs chicken pieces
1 16 oz bottle of BBQ sauce
Place chicken at bottom of crockpot and pour bbq sauce on top. Stir will. Cover and cook 6-8 hours or longer on low. Meat should be tender and fall off bone. For hot chicken, add hot sauce!
OPTIONAL: Use beef/pork ribs in place of the chicken!
#24 Sloppy Joes
1 lb ground beef
1 28 oz can of spaghetti sauce
1 packet sloppy joe seasoning
Hamburger rolls
Optional: cheese
Brown beef and drain off fat. Add spaghetti sauce and sloppy joe mix and cook for a few minutes. Top hamburger buns with sloppy joes mix, top with cheese and enjoy!
#25 Corn Chowder
2 tbsp butter
1 finely diced small onion
2 cans creamed corn
1 can whole kernel corn
2 cans milk
4 medium potatoes, peeled and cubed, cooked separately
salt and pepper to taste
In a large pot over medium heat , melt butter and add onions. Cook until onions have softened. Next add 2 cans of whole kernel corn. Fill both cans up with milk and add the milk, too. Then add the potatoes and salt and pepper to taste. Turn heat to low-medium and stir until warmed and reaches desired consistency.
#26 Hot dogs and Peppers
1 pkg hot dogs, cut in half lengthwise.
1 green pepper, top cut off, cored and cut into slices lengthwise.
In a large frying pan sprayed with cooking oil spray, and on medium heat, slowly cook hot dogs until browned and peppers until tender. You can serve as is or in a bun.
Optional: You can use keilbasa or knockwurst in place of the hotdogs!
#27 Pulled Beef sandwiches
Hamburger buns
2-3 pound beef roast
1 16 oz bottle of BBQ sauce
Cook on low in crockpot 6-8 hours. Shred meat and serve on hamburger rolls.

#29 Taco Casserole
1 lb ground beef
1 pkg taco seasoning
1 cup shredded cheese
1 box corn bread mix
(easily doubled!)
Toppings: lettuce, tomato, onion, etc
Preheat oven to temp on cornbread batter pkg. Make cornbread batter according to pkg. Brown ground beef and drain off fat, add the taco mix according to directions. When done, in a 9 X 9 pan, spread taco beef at bottom, top with cheese, then add cornbread mix to top. Bake according to directions for cornbread. Top with toppings when done!
#30 Nacho’s
1 small bag nacho/tortilla chips
(or make your own by frying up pieces of tortillas!)
1 lb ground beef
1 pkg taco seasoning
1 cup shredded cheese
Toppings: guacamole, sour cream, onions, black olives, etc
Preheat oven to 350 degrees. Lightly spray a cookie/baking sheet with veggie oil spray. Brown beef and drain off fat, prepare with taco seasoning packet as directions state. Put a layer of nacho chips on the cookie/baking sheet. Top with taco meat and cheese. Bake until cheese is melted and bubbly. Remove from oven and add toppings. ENJOY!
#31 Easy Lasagna
12 oz bag of egg noodles
1 lb ground beef
1 28 oz jar/can of pasta sauce
24 ounces cottage cheese
16 ounces sour cream
(or, in place of cottage cheese and sour cream, use 32 oz ricotta cheese!)
4 oz shredded mozzarella cheese
Preheat oven to 350 degrees. Brown ground beef and drain. Cook egg noodles until just done, drain. Mix noodles, cottage cheese, sour cream and ground beef. In a 9 X 13 pan, spread a layer of pasta sauce on bottom of pan. Spread a layer of the noodle/cheese/beef mixture. Alternate ingredients inlayers until all are used, ending with a sauce layer. Top with shredded cheese. Cover with foil and bake for 45 minutes. Then remove foil and bake an additional 10-15 minutes.
#32 Mommy Help
4 pkgs beef ramen noodles
1 can corn (or 1 cup leftover veggies)
4 cups water
1 lb ground beef
½ cup chopped onion
In a saucepan, brown the ground beef and onion until done and drain off fat. Add sauce packets from ramen noodles (only 2 of them, NOT all 4!) and the water. Break up the noodles and add to the pan with the veggies. Cook 5 minutes until noodles are done and most of water is absorbed.
Optional: You can use chicken and chicken ramen noodles instead!
#33 Chicken N Dumplins
2 lb fryer chicken or 2 lbs chicken parts
1 tsp salt
¼ tsp black pepper
1 can biscuits (8-10)
3 tbsp flour
1 cup COLD water
In a large pot boil the fryer chicken (usually 40 minutes). When cooked thoroughly, remove chicken carefully and let cool. Pick off all meat and set aside. SAVE THE BROTH from boiling the chicken! Skim off the scum and fat from broth. Salt and pepper broth to taste. Add chicken back INTO the broth. In a separate cup, mix flour and COLD water until smooth. While broth is boiling, SLOWLY add flour/water mixture and STIR CONSTANTLY while it thickens. Return to simmer. Cut biscuits into quarters. Drop into stew. Cook uncovered over low heat for 10 minutes. (remember to STIR once in a while so you don’t burn the stew to the bottom of the pot!) Cover and cook for an additional 10 minutes. Test dumplins with a toothpick, when it comes out clean they’re DONE!
Optional: Add veggies to make it a chicken and veggie stew!
#34 Chicken BEST!
2 ½ lbs chicken parts
1 envelope onion soup mix
½ tsp salt
¼ tsp thyme
1 tbsp garlic minced
2 cups chicken broth
1 small onion, quartered
2 tbsp chopped parsley
Place the chicken and onion into your crockpot. Mix together all remaining ingredients and pour into the crockpot. Cover and cook on low for 8 hours.
#35 Beef Noodle Casserole
1 lb ground beef
1 small onion finely chopped
1 pkg egg noodles
1 can condensed tomato soup
1/8 tsp black pepper
1 cup breadcrumbs
1 ¼ cups water
Preheat oven to 300 degrees. Lightly spray a 13 X 9 pan with veggie oil spray. Brown beef and onions in skillet, drain off fat. Cook noodles until done. Combine soup, water and pepper. Stir into cooked meat. Add cooked noodles to meat mixture. Stir carefully to avoid tearing noodles. Spoon mixture into the pan. Sprinkle bread crumbs over the top and bake uncovered for @ 30 minutes.
#36 BBQ cups
¾ lb ground beef
½ cup bbq sauce
2 tbsp brown sugar
1 tbsp finely minced onion
1 can biscuits
¾ cup shredded cheddar cheese
Preheat oven to 400 degrees. Brown beef in skillet and drain off fat. Add bbq sauce, brown sugar and onion. Place individual biscuits into muffin pan, ungreased, and press them out all around each muffin pocket (creating a cup to hold the filling). Put mixture into biscuits and top with cheese. Bake 10-15 minutes.
#37 Beef Stew
2 lbs beef stew beef (cut off excess fat!), cut into 1” cubes
¼ cup flour
½ EACH salt and pepper
1 ½ cups beef broth or hot water
4 carrots cleaned and sliced into coins
3 potatoes, cleaned and cut into chunks
1 stalk celery sliced
1 small onion, quartered
Put meat into crock pot. Mix flour, salt and pepper. Pour over meat and stir to coat meat with flour. Add remaining ingredients and stir to mix well. Cover and cook on low 10-12 hours. Stir thoroughly before serving.
#38 Lasagna Roll-ups
1 pkg of lasagna noodles
16 oz container of ricotta cheese
1 can/jar pasta sauce
4 ounces shredded mozzarella cheese
(You can add fresh steamed spinach to the sauce)
Gently boil noodles, cool slightly, spread filling on each noodle then spread a little sauce, roll & put in lightly greased 13 X 9 pan. Repeat repeat repeat. Pour remaining sauce over the roll-ups, sprinkle the cheese over them. Bake at 350 until cheese is melted to desired consistency.
#39 Kebobs: (NEEDS to marinate overnight!)
1-2 pounds of beef stew beef, fat cut off (or chicken)
1.5 cups soy sauce
2 tpsb minced garlic
1 cup pineapple juice
1 tsp each garlic and onion salts
Fresh veggies (cherry tomatoes, chunks of onion and green pepper, chunk pineapple, mushrooms, etc)
SKEWERS (metal or wooden, but NOT rounded or nothing stays on them).
In a bowl, mix together the soy sauce, minced garlic, pineapple juice and salts. Mix well. Then add the beef pieces and let marinate several hours or overnight for best results.
When ready to cook (grill or broil), put meat and veggies alternately on skewers. Grill or broil to perfection! SO good! DO NOT reuse the marinade!
#40 Italian Sausage Dinner
1 lb italian sausages (could be pork or turkey)
2 large green peppers, top removed, cored, cut into bite sized chunks.
1 large yellow onion, cut into bite sized chunks
1/2 cup water
1 jar (20-28 oz) of chunky salsa
1 1/2 tsp italian seasoning
1 tsp salt
Cut up italian sausages into bite sized pieces. Add sausages and water into a large frying pan. Bring to a boil, then reduce heat and cover. Cook until no longer pink inside. When done cooking, drain off water and fat. Add onion and green pepper into frying pan with salsa, italian seasoning and salt. Stir well. Cover and simmer 10-15 minutes or until veggies are tender. Serve with a fresh salad and rolls.
Option: You can make this with HOT sausage or regular sausage, too!
#41 Stuffed Green Peppers
4 green peppers tops cut off and cored.
1 lb ground beef/turkey or chicken, browned and drained
2 cups rice, cooked.
Brown gravy or tomato sauce
Preheat oven to 350 degrees. Use a bundt pan or two loaf pans (this keeps the peppers upright for cooking). Lightly spray with cooking oil spray (helps with cleanup). Mix browned meat and rice together with some salt and pepper or whatever spices you'd like. Place the mixture into the peppers. Cover with the brown gravy or tomato sauce. Bake 1 hour or until peppers are tender.
#42 Spaghetti with chicken sauce
8 to 12 ounces Spaghetti/pasta (cooked and drained)
1 28 oz jar/can pasta sauce
1 cup cooked chicken (shredded)
Cook pasta and drain. Warm pasta sauce, add chicken. Serve the chicken pasta sauce on top of the pasta.

***Cheese-Garlic biscuits (like the ones at Red Lobster!)
2 cups Bisquick baking mix
2/3 cup milk
½ cup shredded cheddar cheese
¼ cup butter melted
¼ tsp garlic powder
Preheat oven to 450 degrees. Mix baking mix, milk and cheese until soft dough forms; beat vigorously for 30 seconds. Drop dough by spoonfuls onto ungreased cookie sheet, 2” apart. Bake 8-10 minutes or until golden brown. Mix melted butter and garlic salt; brush over warm biscuits before removing from cookie sheet. Serve warm.
***1.5 lb loaf Honey White Bread
1 ¼ cup milk
3 tbsp butter
3 tbsp honey
3 cups bread flour
¾ tsp salt
1 ½ tsp active dry yeast
Heat milk to HOT and add butter and honey. Cool to room temperature. Add milk mixture and all remaining ingredients into your bread machine in the order listed above. Process on the basic bread cycle according to your bread machine’s manual. Use immediately or freeze.
***Italian Bread
1 cup water
1 ¼ tsp salt
1 tsp sugar
3 cup bread flour
1 packet (2 ½ tsp) yeast
Add ingredients into your bread machine as directed and process on the basic bread cycle according to your bread machine’s manual.
