Lentil Spaghetti Sauce
1 C chopped onion
1/2 C finely chopped carrots
1 tbls miced garlic (I use more)
1Tbls Olive oil
1 15oz can tomato sauce
1 C water
1/2 C chopped tomatoes
1/4 C lentils rinsed
1tsp each of basil and brown sugar
1/2 tsp oregano
1/4 tsp each of thyme,black pepper or hot pepper sauce

In a saucepan saute onions,carrots,garlic in oil until onions are tender, add remaining ingredients. Simmer 1 hr Serve over the pasta of your choice.
