Cheese Biscuits

2 c. all purpose flour
4 tsp. baking powder
1 tsp. salt
1/2 c. shortening
1 c. shredded sharp cheese
2/3 c. buttermilk
Combine flour, baking powder, and salt; cut in shortening. Add cheese, and gradualy stir in buttermilk. Turn dough out on lightly floured board, and roll thin; cut into small biscuits. Place on greased baking sheets, and bake at 400F for 8-10 min. Yield: 1 1/2 doz.

I just made these for my breakfast between typing new posts. I dont use shortening, so I used butter, and they are GREAT! I just happened to have some sharp cheddar that I needed to use, and this was perfect.

how much butter did you use? :)

I used 1/2 a cup of very cold unsalted butter, which I cut into small chunks before incorporating it to the flour with a pastry blender.
Heather <---Wondering just how many Heather's there are on this board! I know of 4, and think there are more.
