I want one that's tried and true, not one that I find on a search engine.
Our deli makes the BEST carrot muffines with cream cheese frosting I've ever had and I want to make some like it. They have shredded carrot, some raisins but not a lot (I don't like raisins but I like how they have them in there--you don't get one with every bite, just every once in a while), walnuts...and they're VERY moist. There's the usual spices that go in carrot cake too.
Anyone got a good recipe so I can duplicate this and stop paying a fortune for their "gourmet" muffins?
Oh, I don't cook low fat or anything like that so bring on the naughty recipes!

Yummmmmmmmm! I love carrot cake/muffins! I had the BEST ever muffins awhile back at a grocery store. They had crushed pineapple in the muffin & in the frosting. THE BEST! Of course, they never had them again.
