Okay, this is a recipe that my nana passed down. Our family has loved it for at least 4 generations, now, and it's so simple and quick, you'll never know what hit ya!

Ingredients:
1 box French Vanilla cake mix
1 29 oz. can sliced peaches (in syrup)
nutmeg
cinnamon
butter

Steps:
1. Pre-heat oven to 350 degrees.
2. Get 9x13 in. pan (we use Pyrex) and grease bottom w/butter.
3. Sprinkle nutmeg and cinnamon on buttered bottom to taste (more is better in our house).
4. Open peaches and pour into pan. Even out the peaches.
5. Pour cake mix on top, evening it out, too.
6. Put in oven for about 10 min.
7. After 10 min., add water. Just enough to wet mix, and kinda stir mix, water, and peaches while adding water. Make sure you don't add too much water, or the cake will be very thin and airy. If you don't add enough, the cake will be very doughy. It might take some time to figure out the right consistency for your family. Make sure the mix is completely wet, but don't worry if you see a few lumps that aren't mixing in. It won't affect anything.
8. Bake 25-30 min. more, depending on how fast your oven bakes and how crusty you want the cake to be.
9. Remove, cool (but not too much!), and enjoy! We love this cake. It's nutritious (;) ), easy, and yummy!

I hope y'all like it. We prefer to eat it warm, but it tastes good the next day, too (if it lasts that long).

This was/is a staple at our home - it is amazingly wonderful! (I like it warm, also)

Little4estKaren: Have you ever tried different flavor mixes? We've tried lemon and vanilla. The lemon was good, vanilla was kinda bland, I think.

Soul4five -

I have only used the "white" cake mix or a "yellow" homemade mix -

I put the peaches in the pan, mix about 1 tbsp of flour into the peaches, along with the spices, mix up the cake & drizzle it over the peaches & then bake ....

it is such a wonderful "comfort" food ... it is kinda good "cold" although I agree that it rarely lasts that long.... ;) (and I really DO like it warm ... )

And, I agree about the spices - more is better - I add a "pinch" of cardamon when I have it around! (I usually add a tsp of vanilla to the peaches, too)

I have made this for potlucks, little dinner parties & it is fun to watch the reaction of people who eat it for the first time! They look at you like you have spent forever on it when it is so simple & easy to make!


I may just have to try it with a different flavor cake mix now...hmmm...sounds like a trip to the store is in order!

Here is one we like a lot too. It's from the "Gone With the Fat" cookbook

Quick and Easy Peach Cobbler

1 20oz can of peaches in light syrup (recipe calls for halves, I use slices though)
1 cup sugar (I use a lot less..if you use peaches in heavier syrup you need to cut down on the sugar anyway IMO)
1 cup low fat Pioneer biscuit mix (Bisquick or your own homemade works well too)

Vanilla, cinnamon, nutmeg other spices etc (optinal)

Spray the bottom of a 3 qt casserole dish with non stick cooking spray. Combine all cobbler ingredients, mix well. Spoon into casserole dish. Bake at 350 for 35-40 minutes or until golden brown.

This is called a cobbler but I'd consider it more a cake. To me cobbler is a lot of flaky pastry with a crisp sugared top! :)
