I know this should go in the food forum, but I thought alot of you might like this :) It tells how each ingredient works in the bread. And it's all natural, whole wheat! I've been making it this way for almost a month, and we LOVE it!! I printed it off, and keep it with my cookbooks.

Hey thanks for the plug--that's my site! :) Those are my little piddies (and my pathetic loaves at the end) demonstrating Jean's really great recipe/techniques. As I say in the notes accompanying the article, don't hold my sample loaves against Jean!
I'm currently experimenting with Joe Ortiz's book "The Village Baker" and fresh-ground flours. Got a pretty good "poolish"-method 100% whole wheat that was tangy with a good crust on the second try. There's enough information between that and "The Bread Builders" to keep me occupied and learning for the rest of my life...

haven't made bread for the longest time. I suck suck suck at handmade bread but my bread machine bread is wonderful even if I am tooting my own horn!
I think my problem when hand making it is vastly underestimating the amount of kneading I did plus not enough liquid.
oh and gluten makes a HUGE difference in whole wheat or alternative flour breads!
Lastly, I think commercial bread often uses soy flour to increase keeping time. My mother is sensitive to soy (too many years of using it as a dairy replacer )O: and it is in almost all the commercial bread in Britain. I haven't tried it because homemade read barely lasts one afternoon in our house.

Yummmmmmmm. . .I was inspired and I baked two loaves of this bread today--I am eating the first slice now and it is awesome. Not quite as high as I would like--but not a heavy laof either really. This is going to save me $2.69 a loaf! yay!

A very tasty loaf! I have been trying to make whole grain bread that did not feel like a brick--and could work for sandwiches well! I cannot believe what a difference the vital wheat gluten makes!
yummmmm going to slice a peice of bread now!

We don't do wheat in our house, anyone have a recipe for brown rice bread?
