View Full Version : Coconut-Red Curry Pumpkin Soup

3C Fat-Free Less Sodium Chicken Broth
1 can of Pumpkin (15oz)
2tsp chili sauce w/ garlic (such as Hokan)
1/8tsp salt
1/8tsp curry powder
1C light coconut milk
1T fresh lime juice
Chooped fresh cilantro (optional)
COmbine the first 5 ingredients in a medium saucepan, stirring until smooth. Bring to a boil; reduce heat, and add coconut milk, stirring with a wisk. Cook 1 minute or until thoroughly heated. Remove from heat, and stir in lime juice. Ladle soup into bowls, and sprinkle with cilantro, if desired.
yields 4 1/2C servings

I have not tried it but I like everything that goes into it, and I seem to be fairly adept at choosing good recipes and/or tweaking them to suit our tastes.

Omigosh that sounds good! I think I'll just copy that recipe and take it home, mmmmmm! How different would it be if we have actual punkins and not cans of punkin?

made it a few days ago and everyone LOVED it! we put rice in it and found it to be very comfortimg, warming and delicious.
