I make this pretty much anytime we go to a cookout or covered-dish type of place. It's incredibly easy and sooo yummy!

2 heads raw broccoli, chopped small
1 lb. bacon, fried crisp and chopped (I chop it before I fry it; makes it easier)
1 red onion, chopped fine
(I also added a red pepper today!)
Dressing:
1/2 c. sugar
1/2 c. mayonnaise
2 tbsp. vinegar

Holy crap. This stuff is sooo yummy!

I love that salad--I'm taking it to a BBQ today, I add cooked & cooled tortellini, sunflower seeds, & craisins (or golden raisins) to mine. I could live on that stuff.

I made something similar today, too! Except that I add peanuts and don't use onion. I used Greek yogurt instead of mayo and added curry powder. Yum!

You will not believe this, but my dh was just asking me if I could make this! (His mom used to make it.) So now I have the recipe and if I get my act together I can make it for his bday tomorrow :)

It needs the sugar... it kinda makes it like a glaze. I use honey sometimes instead. You could do a no sugar version that I am sure would be really good, just different.

Has anyone cooked a broccoli salad and par boiled the broccoili first? Not even really par boiling, but maybe 30 seconds? It would turn it bright green and hopefully take a tiny edge off the rawness, I would think. Although I would love raw broccoli, I know the rest of my family doesn't.

I also quickly did a search for broccoli recipes (to see if any had cooked it a bit) and there are a few with less sugar, some with balsamic instead of white vinegar, and lots yes, with sunflower seeds and raisins!

YUM! I can't wait to try it!

You can blanch the broccoli and shock it in cold water. But it is a lot like coleslaw... after it sits the raw broccoli kinda, wilts almost? I don't know. I do all sorts of variations, white balsamic vinegar, mayo, sugar and honey... and I season mine as well.

Blanch! That's the word. Just a flash in the boiling water then to cold water.

Hmm...wilting. Gotta think about that one.

My aunt makes a layer salad that has the same dressing, plus peas, tomatoes, shredded cheese, and cauliflower.

I ate a huge bowl of this when I was pregnant with John. And it didn't sit well. And I've not been able to even look at it since!

BUT - before that, it was one of my favorites!

I made this today and it was yummy! I've been looking for a new way to eat broccoli. :)

I subbed scallions for the red onion, and pepitas for the sunflower seeds since that is what I had on hand. I also used red wine vinegar. I'll be making it again for sure! Thanks.
