Gorilla Burgers from Fresh. Our substitutions are in parentheses, usually because we didn't have the called for ingredient on hand.
This was so good we ate it all up and dh made a second batch for us. Kids liked it too, with the older two having seconds.
Garden Burger ingredients
1 cup walnuts
1/4 cup flaxseeds, ground (we used flax seed meal)
3 carrots chopped
1 medium red onion chopped (vidalia)
2 cloves garlic
1/2 cup lime juice (lemon juice)
1 T onion powder (none)
1 t paprika (none)
1 t sea salt
(1 T cumin added)
(1/2 cup cold pressed olive oil added)
Additional ingredients
1 head romaine lettuce, leaves cut away from stem
1 large tomato chopped
1/2 bunch green onions diced
1/2 avocado, sliced thin
Blend all garden burger ingredients in a food processor. Fill romaine leaves with garden burger. Add tomato chunks and onions and top with avocado slices. Serves 3 - 4.
