A California family brings CA grown fruit up to Alaska several times in the summer, and I'm debating getting some cases. Last time I did this we ate oodles of fruit, heaven, and gave lots away. This time I'd really like to put some by. My kids love dehydrated peaches (homemade kind, not store kind) so that would be good to do, but here is the list of fruits available by the case that we like - Can you tell me what I might do with them? For example, do pluots turn out nice when dehydrated? What about plums? Would it be better to make jam with the plums? I have no experience except with peaches! :)

Peaches
Pluots
Plums
Nectarines
Figs - any way to store figs other than the fridge?
Cantaloupes - Is there anything to do with a cantaloupe other than eat it fresh?
Gala apples - these cost half of what I'd have to pay in the store, but it's a 40 pounds case!
Granny Smith apples - We don't even get good GS apples in the store, they are blah. So I'd like to get some, I'd like my kids to taste a real tart apple, but what to do with a case? Is there a way to can them in an "apple pie" way for making pies later? I know some people make whole pies and then freeze them, but I don't have the freezer room for that. (Stuff in my chest freezer gets shoved around as we search for things.)

You can can (LOL) the apples to use later in apple pie, I think.

I'd dehydrate the plums = prunes!

I would dehydrate the plums too!
The GS apples, I have a friend who cans apples (not as sauce) but for pies and such so yes, it can be done.

Never seen a pluot, off to look it up!

Searching the net I found lots of yummy things to do with the figs. I think I'm just going to force myself to figure it out by ordering and then dealing with it. :) It's just that we don't use much jam so I don't want to jam everything.
