I've got one freezer as a freezer and another set up to function as a refrigerator. It got me thinking about storage of root vegetables and other produce. Living in a warm humid climate, we don't have anywhere for long term storage of large amounts potatoes, onions, squash, etc. However, I could find another cheap/free freezer and set it up to function at 50 degrees to store these items. I wonder how often it would run and what the utility cost would be. I also have to wonder if humidity would still be a problem.

I think humidity would come into play. What about processing those items and freezing the prepped food? :)

Humidity...yes.
I am learning a lot of technical stuff about root cellars soon via the farm to school project. I would be happy to share what I learn! We are consulting with a root cellar expert to build one for the school. :D

I was reading a magazine that had a contest/grant/something for people who are involved in school lunches. Hmm. Now if I can find it. I'll thumb through my mags here and see if I can find the info for you again.

Thanks! I'd be interested. I wrote - and our school won - a farm to school grant for $14,250, so that is what is getting this project started. ;)

Yes! I'd love the root cellar info. I could have one dug, since chase will have a bobcat within the next few weeks, however, the water table is SO shallow on our acreage, I just don't think it'll work. Even currently in an "exceptional" drought we hit water at 2 feet. Morgan's been post hole digging, manually, and despises the water on our lot. lol
