is it possible? I was thinking I would try this:

8 cups popped popcorn
1 cup peanuts (optional)
3/4 cup brown sugar
1/4 cup margarine
3 tablespoons corn syrup
1/4 teaspoon each salt & baking soda
1/2 teaspoon vanilla

Well it isn't exactly caramel corn, but if you like Kettle Corn, I've made this recipe:

Follow the hints in the reviews though to wait to add the sugar so it doesn't burn. Next time I make it I'm going to use coconut oil - I bet it will taste great!

I sweeten caramel with honey and/or rapadura (dried cane juice- very dark). I don't think you need corn syrup at all.

I don't usually have corn syrup in the house. I substitute golden syrup (do you have that in the US?) or honey or pancake syrup or whatever I happen to have. LOL.

This doesn't have to do w/ caramel corn but RAF, I'm surprised by the names of your kids. I have a Ronan (even though I use accents above the o and a, but can't right now). I also have an Arabella.

It can be subbed for honey, etc, and it has a lower glycemic impact. Next time you want to spend $5 for a tiny bottle of sweetener, you simply must try it. :D (really, it's worth it. I use it sparingly, though.)

I love agave nectar but for things like rice krispie treats I use brown rice syrup. It's the exact right consistency for a sub for corn syrup.

I was going to say brown rice syrup because I've used it for rice krispey type treats too- BUT it is a bit less sweet tasting (to me anyway) so keep that in mind. I agree it is the perfect consistency!

Wow, what a coincidence! I have never met anyone with an Arabella or an Arabelle. How do you pronounce Ronan? We pronounce it Row-none.

Same way. We read Eragon and there is a Roran. After I heard that I thought I liked that name, too, but you can't have a Ronan and a Roran. Actually, we have a Brendan, too, and I think because of the ending we end up accidentally calling them the wrong names. Bronan has come out, too.

I was going to say brown rice syrup, too.

But corn syrup, fyi, is not the same thing as high fructose corn syrup... if you can't find anything else. ;)
