stir-fry
stroganoff
chili (I use stew beef for chili more often than ground beef)
beef/barley soup
fajitas
shepherd's pie (again, in place of ground beef)
shishkebabs
That's all I got.

Best Beef Stroganoff - Allrecipes (http://allrecipes.com/Recipe/Best-Beef-Stroganoff/Detail.aspx)
The good thing about stroganoff is that it's pretty hard to mess up. I don't necessarily use that recipe (just one I found on allrecipes), but I probably do something similar. For instance, if I had a can of cream of mushroom soup, I'd probably use that and skip (or at least reduce) the amount of sour cream. I don't usually use mushrooms, because only DH likes them! But the cream of mushroom is OK.
Anyway, hope that helps!

well, stew meat is generally a cut of meat that needs longer cooking, so i would make something that you cook it for a long time in! maybe shredded beef tacos or enchilladas, or maybe kinda stew it, but in tomatoes/garlic/oregano/lemon and do more of a greek inspired dish over orzo or rice.

Throw it in the crockpot so it cooks up nice and tender and kind of shreds up easily. You could use it in tortillas (add mexican spices) or bbq beef sandwiches.

I like it in the crock pot with the cream of mushroom soup. Also in the crock pot with curry sauce and veggies. I'm planning to do that one this week.

I was going to say barbecued beef, too - or braised with mexican spices for shredded beef burritos or tacos

my DH HATES curry! I can't wait for him to deploy so that I can make it A LOT!!!
great ideas for teh future but I think I will stick to stroganoff for tomorrow - will do it int he crockpot so it cooks for a LONG time.
I never even thought of using it for burritos! What a great idea.
stefado/stifado. It is a greek dish thats sort of like a stew, but only has tomato and onions. Some of the recipes have pearl onions, but I prefer regular. Some serve over rice, some with pita bread and feta-- I prefer the later. Some of the recipes have raisins/currants-- I haven't ever had those in it. Cinnamon, red wine ,garlic, oregano and bay leaves are what I remember about it. I can't find the recipe that I used for years, so I haven't made it in ages.
