* pancakes and eggs for dinner
* perogies with onions, cabbage, a little bacon, and sour cream
* spaghetti and meatballs (has WAY higher wow-factor than meatsauce, for some reason)
* curry over rice
* Baked whole salmon (we get it free from friends who fish, or whole frozen salmon at the grocery store for like $4 each and can usually get two meals out of it)
* Bean dip and tortilla chips (throw a can of beans, some sour cream, some salsa, seasonings, and cheese into the blender, then warm it up and serve)

Fancy is relative. Don't let the names of our meals fool you, it's mostly just beans & rice in various forms. That's the ticket, making the same ingredients look like a different meal every night. Fools DD every time.

Mine are picky - no beans here. Driving me crazy. We are working on it though.

Our cheapies are:
*veggie soup (we call it Stone Soup)
*eggs and potatoes
*pancakes (maple syrup is pretty cheap for us)
*spaghetti

Maybe I will start putting a few beans into veggie soup...

Honestly? Mine eat just about anything. We're very lucky. We do have a super picky one in the mix, but I can always make one thing that she will eat.

(any pasta, bow ties are best)

Once drained, mix with butter, sour cream, cottage cheese, cheddar if you want, mix and let it melt and then salt and pepper.

what is a frittata?

recipe please!

BlueRoseMama

A frittata is a crustless quiche. I put left over veggies; already cooked potatoes, steamed broccoli, sauted onion, a bit of garlic, and perhaps some left over ham, or bacon in a oiled glass baking dish, and then cover it with 6 beat eggs. Top with cheddar cheese (or any kind really, we like the sharpest cheddar you can get) and bake it for about an hour. It is a good meal cold usually too.

Another one we do. We bake two chickens when we do roast chicken, then we strip the meat off the bone and two days later we make chicken noodle soup out of the leftovers.
