View Full Version : Winter Casserole Recipe:)

1 lb ground beef or lamb or mixture.
1 chopped leek or onion
1 cup cabbage chopped fine(i usually add 2 cups)
garlic
salt pepper to taste
4 potatoes sliced thin
Sautee the leek, add minced meat and brown. Once meat is done, mix in chopped cabbage garlic salt and pepper. Can add chopped parsley or other herbs if you like.
layer 1/2 meat mixture on bottom of casserole. then layer 1/2 potatoes, then mince, the potatoes. dot with butter or oil. Bake at 350 degrees for an hour. I bake in a corningware..with the glass lid on.
Serves four. can easily double :)

Hmm. I could do this tonight. Does it need any kind of sauce to keep it moist while it's baking, or is it more of a layered meal, rather than a stew?

As long as you cover it, it stays totally moist. Just dont' dry out the meat when you brown it...
the cabbage adds moisture:) you can even add shredded carrot to the mixture for more vitamins.

Yeah, that would be really yummy and nutritious. I might be running out of time for tonight, but I'll definitely do it in the next few days. Tonight I think it's going to be scrambled eggs. ;)

Mmmm, thanks, if I leave out the potatoes it is low carb for me. :) Or maybe sub a lower carb root veg for that...hmm...
