LOL! i used to see nothing and feel like we needed to eat out until i could get to the grocery store. but...i think i have finally re-trained my thinking. it's so cool!

everything *looks* bare.

i have in the pantry...
popcorn, box of cereal, pretzels, animal crackers, cashews, pistachios, 1 pack pb crackers, raisins, craisins, coconut

2 cans tuna, 2 cans pumpkin, pb, honey, italian bread crumbs, ritz crackers, brown and white rice, ww pancake mix, lentils, grits, oatmeal, croutons

blueberry muffin mix, spice and choc cake mix, flax seed, hot choc mix, tea bags, butterscotch pudding mix, a couple of tastefully simple desserts i bought for the holidays...lol.

freezer...
green beans, black eye peas, broc and cheese, 2 frozen meals, small amy's pizza, 1 lb chicken breasts, tilapia, chicken legs, 1/2 lb ground turkey strawberries and blueberries

fridge...
little bit of carrot and apple juice, egg nog, 4 eggs, applesauce, 2 cups jello, salsa, little bit of shredded cheese, parm cheese, 2 pieces processed cheese slices, 4 potatoes, onions, oranges, 3 pieces of turkey lunch meat

random ingredients...flours, corn meal, baking powder/soda, salt, br, conf, and white sugar, 3 packs of yeast, olive oil, vinegar, veg oil

catsup, mayo, salad dressings, barbeque sauce, maple syrup, jelly, half and half, butter

it looks like lots of words written out that way, but it looks very very bare to the eye. tonight, i am made corn bread for the leftover lentil chili and rice. i also made bread for 2 turkey sandwiches and 1 grilled cheese for lunch tomorrow (w/ pretzels). we have several breakfasts and/or dinners of pancakes, grits, oatmeal, muffins. i can slice the oranges with meals or i can juice them to use with the little bit of juice and the frozen fruit we have for smoothies at lunch or dinner. for lunches, we have tuna and crackers and the amy's pizza for 2 of us...and the rest of the bread for pbj.

i am going to mix the cashews, craisins, and cereal (o's) for a fun trail mix for lunch/snack, bake with the raisins b/c they're kinda old...lol.

for dinner, barbeque chicken legs, tilapia, taco lentils, something with the chicken and salsa and cheese, broc and cheese...and then use the leftovers for baked potato night, green beans, rice, cook the turkey and add it to the lentils to make it different for dh.

we obviously have plenty of dessert. :) making sweet tea makes me happy. hot choc, coffee, and popcorn feels like we're having fun at home.

we have it made. why look around and think about not having food? we have lots if i think about it this way.

was about to hit send...and wanted to say...i'm just challenging myself. we have less money than we need right now due to dh's business getting started, but we have plenty of potential...and certainly have enough for *food*...just trying to challenge and stretch...don't want anyone to be worried!! :)

Good for you for seeing the cupboards with a half-full attitude. LOL. You're right, you do have lots of possibilities there. Hooray for ingenuity!
