I am thinking about my menu since its Dh's payday this week and was trying to decide if I wanted to do anything new :)
Anything you LOVE making? I LOVE making purple and red roasted potatoes. Just toss in olive oil and salt and thyme and rosemary and bake in the oven. YUM!

DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a large bowl, mix together the eggs, Cheddar cheese, and cottage cheese until well blended. Mix in 1/2 cup onion, pecans, basil, salt and sage. Stir in bread crumbs. Form the mixture into 2 inch balls, and place them in a 9x13 inch baking dish.
3. In another bowl, whisk together the vegetable oil, vinegar, apricot jam, ketchup, 1/4 cup onion, oregano and hot pepper sauce. Pour over meatballs.
4. Bake uncovered for 35 to 40 minutes in the preheated oven, until meatballs are firm, and sauce is thick and bubbly.
*these meatballs are so versatile! I throw everything but the breadcrumbs into a food processor, then add the breadcrumbs. form into balls, add sauce to it. I use walnuts instead of pecans, and have made these with marinara sauce, bbq sauce, alfredo sauce or baked them dry! these are addicting, make 2 batches*

Linda.. I'm stuck on things we *can't* have.. I'm supposed to bring a dide dish or something, and I'm totally at a loss.
wtf? bwahahahahaa
I have not a clue how that pic got on my post.
The sugar glider is not part of the recipe!
It was supposed to say "Sweet n sour vegetarian meatballs".....
I can't figure out how to post a pic on here any other time....go figure.

Is it your pic? On your photobucket?
when you upload, sometimes it automatically clicks cut and copy - maybe you did that when you tried to cut and paste into the reply to post the recipe?

The biggest issue I'm having at the moment is that the movers accidentally took all my cookbooks - so I've been without them for 4 months now. :help: I'll get them all back next month, so I'll be okay for Christmas, it's just Thanksgiving I'm stuck on.
we're avoiding gluten, dairy, treenuts, peanuts, primarily. We've gotten eggs back, and the other things we can't have are things i can work around. Leila can't have turkey, but I'm taking chicken for her :) The kids don't like most veggies.. green beans, peppers, mushrooms, onions, cooked carrots, squash are all on the 'ick' list, so I either need to have them hidden in something, like muffins, or avoid them.

I love to cook it all..I'm a complete control freak about it, too. I do it by alton brown's method now and it's the best turkey ever.
This year we are making mashed sweet potatos instead of the ultra sugary yam thing with marshmellows because I'm low carbing and my MIL is diabetic..but it's all good :D I will take sweet potatos any old way.
I also have to revise my mashed potato recipe because I just can't tolerate milk anymore and my MIL can't tolerate milk fats. So..I dunno what I might do there. Maybe roasted potatos with olive oil instead.
Otherwise, I love to cook thanksgiving dinner :D
