I have squash coming out of my ears! :lol: What is the best way to preserve it for later? Freezing? We have been eating lots of squash, but keep getting more each week with our CSA share. I *need* to find out how best to put it up for fall and winter.

What kind of squash? I froze summer squash (zucchini) in chunks to use in stews and curries and stuff and it seems fine. For winter squash like pumpkin, butternut, etc. I've cooked it first and then froze it so it's squishy and then used it for pies, soups, adding to mashed potatoes, etc. Also, there are recipes for jams and chutneys and salsas that use squashes if you want to do an online search.

I do it all... cubes, slices and even (this idea from Mother Earth News) I grill on the barbie with olive oil, salt n' pepper, let it cool, then freeze. it will taste "like summer" when I warm it up in February!
I also shred my giant zucchini and freeze in 2 cup portions for bread in the winter.

I've only shredded zucchini and froze for zucchini cake, yummy!

Now that I've said it, I hope that's what it's really called! I mean that I slice it and lay it out on a cookie sheet. Stick it in the freezer for several minutes until the outside is frozen and then toss them into bags. That way, they don't stick together. You have loose pieces in your bag.

oh....pure genius!
I've done that with berries but never thought to do it with squash.

thanks! I did like Marina and it worked fabulously. I also roasted tomatoes, flash froze those and now have all that yumminess waiting in my freezer for me for this fall and winter. :)

That's such a simple step that would make it alot easier to use! I'm going to flash freeze everything from now on. You're so smart. LOL.

I have zucchini out the ears...LOL...
I just read a recipe in Back Home magazine - cut thin circles of summer squashes and dehydrate on very low in the oven, or in a dehydrator - squash chips! You can add some tomato slices in too for color and additional flavor.
