I got 20lbs of potatoes for $5 today, and I'm not sure what to make with them. Especially since we have a couple pounds here still. We're going to have baked potatoes one night for dinner, and then mashed potatoes when we have meatloaf.
I'm trying to think of a main dish rather than sides, as we're REALLY REALLY tight money wise right now, and it would benefit us more :)

Scalloped Potatoes and ham- I don't know how to make it , but I bet you could google it.... oh and hashbrown casserole... mmmmmmm

Potato soup is filling and yummy and can be done pretty cheap. Baked potatoes with meat as a topping instead of as the main dish. Potato casserole with a cheese sauce and onions and tomatoes.

We do baked potatoes with chili or broccoli/cheese for entrees - potato soup - baked potato soup - potato bar (all the toppings and let them build their own) - potato pancakes with maple syrup or applesauce - pierogies - ummm

How about potato salad? Chunky style. I usually add some blanched veggies in mine and make it a main dish. Broccoli, carrots, summer squash (lightly steamed, takes on the flavor of whatever you pair it with), cauliflower.....any one or a comination.
Potato soup is a good one.
Scalloped potatoes w/ diced ham.

Fried potatoes and summer squash, served with great northern bean soup and hush puppies...
my grandma used to make fried potatoes sliced, along with the squash and zukes and onions. MMMMMemories!

I second the potato soup with homemade bread- maybe you can do bread bowls if you really feel up to it.
Hashbrowns-
I do a dish in the crockpot-
spray the crockpot
take a pound of hamburger and pat it out in the bottom
then add potatos- as much as you want
then add carrots- as much as you want
pour a large can of cream of chicken or mushroom soup over the top then 1/2 a can of water
cook all day on low.
I will add a lot of potatoes and carrots as they seem to be a favorite of my boys.

I don't have any other recipes for main dishes other than potato soup, but my kids love what we call parmasean potatoes.
cube potatoes, toss them in oil (we use grape seed oil or olive oil), add parsley and shredded parm. cheese. put them in a baking pan and either throw them in the oven at 375 for 30-40 min. or we throw them on the grill in the summer until they are done.
how about potato boats?
