This is not crunchy, and it's really not summery, but it's the happiest meal I've got going this week:
layer browned pieces of chicken over 2 boxes of stove top stuffing. In the stuffing, mix water, a can of broth, and a couple of sliced up zucchinis. Cook in a crockpot until done.
Serve by itself, or better yet:
A can of cranberry jelly, or cranberry something
And carrots, steamed in the microwave, or on the stove.
By my estimate, using generic stovetop, with cranberries on sale, this is a big dinner for five people for right about ten dollars. If you grow zucchini, it's under ten dollars. If you use anything other than boneless skinless chicken breasts, it's way under ten dollars. Or, use one box regular stovetop, one box generic,
This is the most substantial meal I can come up with right now, at our budget.
