For all you health conscious parents, here's one yummy and healthy recipe I wish to share with you. I hope you lke it:
Apple Oatmeal Muffins
These muffins are delicious hot or cold!
Ingredients:
- 1 egg
- 3/4 cup water
- 1 cup raisins
- 1 chopped apple
- 1/2 cup oil
- 7/8 cup rice flour
- 1 cup quick oats, uncooked
- 1/3 cup granulated sugar
- 5 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 2 teaspoons cinnamon
Method:
1. Preheat oven to 375°
2. Grease muffin pans
3. Beat egg in large bowl
4. Stir in remaining ingredients, mixing just to moisten
5. Pour into greased muffin pans until almost full
6. Bake at 375° for 25 to 30 minutes
Yield: 10 to 12 muffins.
