What can I make? It is three days old...I have a couple of cups of it.

We eat it as leftovers, never have too much of a problem getting rid of it.
But how about fried rice? I made it by throwing in any veggies I had around, and some soy sauce. I chopped up chicken to put in it, too, but you wouldn't have to do that. Anders is still allergic to egg, so we left that out.
Or, maybe rice pudding? Are you vegan? If so you'd have to try something besides cream,b ut this recipe looks good: http://www.veg-world.com/recipes/rice-pudding.htm

Fried rice.... (heat in a pan with some oil. Add some veggies in tiny peices, wisk an egg and slowly add it in with seasonings of your choice (soysauce and lemon juice is what I use)) Pilaf... (Add ginger and green peas and heat, toss with green onions and a bit of coconut milk) Soup is always good. Put chili on top of it. Zucchini pancakes (shreaded zucchini, spike or 21 seasoning solute from Trader Joes seasoning, a few eggs, and a bit of flour as a binder. Great with a savory breakfast egg type meal.)
We have that trouble every time I make a big batch... and when I make a small batch, we run out. I just can't win. ;)

My kids will eat it for snack or breakfast with butter, salt and pepper.

THank you for ideas! We usually eat it for leftovers too with a tiny bit of rice oil and salt...yummy. I was thinking i need to make larger batches because Aidra is finally adding into the meal planning(YAY!!!) and I know I am going to have more leftovers and want plans for it~it would be so cool to extend one meal into two..I cuold live on stir fried veeggies and rice every day, but the kids need it mixed up a bit more than that.
I totally forgot about stuffed cabbage...easy and yummy. I couldn't make fried rice as I didn't have any soy sauce or similar and I thought it would be really bland without. Funny, we usually eat bland anyway~lol!

I made a really plain stuffed cabbage with tomato sauce. It is simple, but really good.
I sauteed a chopped large red onion in olive oil(lol)
I added chopped kale that I had as leftover from making pizza.
I heated the rice in the pan with the onion...I added salt and pepper
I also added leftover roasted pumpkin chunks which make it kind of yummy/heartier(/sweeter (pumpkin here tastes more like yams or acorn squash in the states)
then put inside steamed cabbage leaves and covered with tomato sauce(sesoned with thyme) in a baking pan and baked until heated through.

dilled kidney beans and rice:
Mix about i can kidney beans w/ 2 c rice and 1/2 a red onion.
Combine with: 2 T. rice vinegar, 2 T. olive oil, 2 tsp dried dill and and 1 T. umboshi vinegar if you have it.
Combine dressing w/ beans and rice. The combination of the vinegars and dill really taste good!
