We were given a ton of excellent, organic garlic from the girls' Grandpa Dave and I think my body would benefit from a good dose or two of garlic. Do you have any great recipes that use quite a bit of garlic?

I always add extra garlic to whatever I make. We love garlic. We use so much of it that I have to get 10 bulbs at a time, peel, chop and freeze so we always have some ready on hand.
well i was trying to find the garlic soup recipe i used to make, but cant find it, however i DID find a bunch that sound yummy!!

Ok... we are the same way, although there are a few things we do when we need to boost our immune system or just our system in general. The main one is roasted garlic, which I just cut the tops off, drizzle good olive oil over the top and salt well... that is it. Then I put it in the oven (toaster oven is even better, saves ele a ton!) at 400* for about an hour and test it... if the garlic comes out of the cloves as a pastey texture, than it is done. Eat on good crackers. We always sprinkle ours with parmesean, but you don't eat cheese, perhaps J would like that though.

yep, I do the roasted garlic just like val, only I put it on some good crusty french bread instead of crackers.
One of my favorite and super easy recipes is pasta with garlic and oil (pasta y olio, my gramma called it) Basically, it's a cup of good olive oil with at least 5-7 cloves of garlic chopped very well, sauteed, with salt, pepper and some chopped fresh basil - toss with spaghetti or angel hair. It's awesome cold, too!

I was going to suggest roasting it too - it is sooooo yummy that way. You can do it in a toaster oven if it is too hot for the big one. Awesome on bread.
I've also been adding the roasted garlic to my homemade guacamole - avacado and roasted garlic together - what could be better?!

I did the garlic and oil last night like Theresa suggested and Mmmmmmmmm, it was delish!! In fact, I had to laugh last night as the distict smell of garlic rose up as I was nursing Luna. Apparently she doesn't mind garlic-infused breastmilk... ;)
I'll roast some up today. Do you put it in a pan or wrap it in foil or what?

I just put it in a small glass pan and then put foil over the top. :D You are a lucky mama... neither of my kids liked garlic breastmilk at all. ;)

You *are* lucky! My kids got very gassy from garlic.
You can also just braid and dry the garlic; if you keep it in a very cool place it will keep for a long time.

Use garlic in everything!
I love having roasted garlic on hand because you can put it in everything, such as soups, stir fries, scrambled eggs, on toast, crackers, in hummus, everything!

I make something my naturopath calls tonic, cause it is extremely blood purifying, and health boosting. We use it as a dressing, drizzled on toast, as a basting sauce, tossed in pasta, etc etc
5-6 cloves garlic
1 bunch parsley
2-3 lemons
olive oil
1T celtic sea salt
Grind the garlic, salt and parsley in a mortar and pestle (or if you are lazy, chop or crush in a press), til a paste, add lemon juice, and top up with olive oil to the top of the mortar (I use one big enough to take about 1-1.5 cups of olive oil). Store in a jar in the fridge. Best after at least a couple of hours to mellow a little, but still good straight out of the mortar!
