I have been making these for about 8 summers. The note I wrote to myself in the cookbook says "use this recipe, makes very good pickles 7-20-99). I have not found an easier or tastier b n b pickle recipe out there. Here it is:
Bread And Butter Pickles
25 cucumbers, sliced medium thick (about 10 pounds)
1/3 cup pickling salt
5 cups white vinegar
5 cups sugar
2 teaspoons mustard seed
1 teaspoon powdered cloves
In a large glass, ceramic or stainless steel bowl combine cucumbers and salt and let stand for three hours. Then drain. I don't rinse the cukes off.
In a medium sized saucepan, combine remaining ingredients and bring to a boil. Add cucumbers but do not reboil.
Pack cucumbers and syrup into hot, sterile pint sized jars, leaving 1/4 inch headspace. Seal. Process in boiling water bath for 5 minutes. Yield 7 - 8 pints.
You can go to www.homecanning.com to get step by step directions if you have never canned before. There is also an altitude chart there for different canning times depending on where you live.
