I have 1 lb of organic grain fed stew beef and want to make beef stew

I want something very harty and thick but not fatty

I make an Italian beef stew in the crockpot my family loves. I brown/drain the ground beef with onions and add fresh garlic. Then I put that in the crockpot with potatoes, carrots, celery, bell pepper and a jar of marinara (since I don't make homemade these days lol). I slow cook it and its really nice - thick and hearty
