I was under the impression that it's because it softens the look of the paper. I do this with my kids artwork (when I remember. lol!) because I just think it looks nicer. I started doing it when we first started incorporating Waldorf principles and I just really liked how it looked. The main lesson books are supposed to be kind of scrapbook-ish so there are different things done in them simply for asthetics.
