Buttermilk prefferably, I am trying to de hydroginate our foods and biscuits is a biggy! We eat them 3-5 times a week! I need tried and trued , and preferabbly something I can store and add the buttermilk too when I prepare them. ( Oh a variation for pancakes/waffles would be a big bonus!!)

You are NOT a flake for not knowing how to make biscuits.

I don't have a recipe that will do well as a "mix", but mine are really good! I can only share it if you promise not to tell my grandmother. It is one of those recipes that is passed down but I really think everyone needs to know how to make a good biscuit. This one is not a rolled type of biscuit, though.

Em's Buttermilk Biscuits

Mix:
2 cups self-rising flour
1/2 teaspoon baking soda

Add:
1/4 cup shortening (crisco)

work it in with your hands or a pastry cutter until the mixture resembles cornmeal.

Add:
about a cup of buttermilk

and mix lightly.

You don't want to overwork the dough and you want enough buttermilk so that it is very sticky/soft.

Turn the dough out onto a well floured surface and knead about 10 times.

form biscuits with hands (this recipe makes about a dozen) and put them on a greased cookie sheet. Lightly press them down so they aren't still "ball" shaped.

Bake at 450 degrees for 10-12 minutes or until golden brown. The timing is very subjective. It might take a little longer or a little less time depending on the size of your biscuits.

also, if you get a dry biscuit with this recipe then you need to experiment with more buttermilk. it is a really really soft dough. There would be no way to actually roll this dough out.
