Just threw this together for dinner tonight. It's tastes yummy.



-Brown some onion & celery (salt & pepper) in butter and olive oil.
-Add some chopped garlic & thyme and saute for 30 seconds.
-Add chopped mushrooms and let cook until soft and juice is evaporated.
-Add some wine (about 1/3-1/2 cup) and let cook down for a couple of minutes.
-Add chicken stock (about 4 coups) and let simmer 15 minutes.
-Add some cream (about 1.5 cups) and let warm.


Optional:
-Add about 1.5 cups of COOKED rice to the finished product.
-Add a small can of shrimp or crab. This will add some protein or just jazz it up.
-Add a tsp of Old Bay seasoning at the end.


I think the wine is what adds that special taste. I don't drink and can't stand the smell of booze, but I do cook with wine very often.

Also, the mushrooms will make juice of their own after they cook a little. That is what needs to evaporate.

I used 1 package of mushroom (I use portebello)
