Ok, I have googled and googled and I can't find anything...those new bendable rubbery baking pans, supposedly silicone is pretty much inert but I am so skeptical. Does anyone have any info on these?

Here's what I've found :)...

PTFE-based nonstick coatings are always matte. If it's shiny, that means it's been coated with silicon - an absolute no-no. Silicon is okay for bakeware, but it reacts badly with animal fats.

Is Silicone Bakeware Safe?
SiliconeZone uses a proprietary formula of silicone designed specifically for baking. They do not use any fillers, which compromise the performance of the baking and may breakdown from the heat. It meets all FDA requirements. Their Silicone Bakeware and Accessories pass the "Twist Test". Bend or Twist any piece of Silicone, if white appears, there is filler being used along with the Silicone, compromising the heat resistance, stability and performance.

Apparently the 100% silicone that's FDA approved is "safe". I'm sticking to my glass bakeware ;).
