What to do with all these potatoes? Is there any way to freeze them? If not we are going to be eating lots of potatoes.

Hmm. Raw? I've never done it, but I know when you buy frozen "hash browns" it is just frozen shredded potatoes that have been coated with a preservative. Maybe you could shred them, dunk them in a salt water bath, dry them off well, and then freeze them. Just a guess, though. No experience here!

I have cooked and frozen potatoes, though, without a problem. I baked them and chopped them up to use later. I have also frozen mashed potatoes in a container without a problem. I added a little liquid when I heated them up.

Most potatoes will keep in a cool dark place for a long time. I know my grandmother used to buy GIANT bags and keep them in a bin in the cellar all winter long to use.
