If I just want to jar up some apples for this winter (dd and I are going to the apple orchard on Friday) then what 'recipe' would you use to jar them???? Or would you freeze them?

If you do a web search you'll probably come up with tons of ideas. Last year I canned apple pie filling. I filled up the jars with apples then made up a syrup and poured it over the apples to fill the jars. It turned out really well. Then of course, there's always applesauce :)
