i have 11 ripe tomatoes right now and about 3 or 4 more that will be ripe in the next day or 2. i love tomatoes, but i can only eat so many. i've been eating cucumber and tomatoe salads w/ either italian dressing or just some oregano and olive oil. YUM!! but 2 tomatoes a day is about my limit. so ......what can i do w/ them? i certainly dont want them to go bad before i get to enjoy them.
oh, and i have given at least 6-7 away already. dont know who else to give them to.
how many do i need to can them?

make some spaghetti sauce and freeze it for later use!:)

Gazpacho or salsa - although both only keep for a few days
stewed tomatos freeze

My FIL makes spaghetti sauce and freezes it -- tomatoes, italian seasoning, garlic, splash of wine (if you have it) and a little sugar --cooks it and freezes it. It's WONDERFUL!

You can freeze the tomatoes (without the skin) in a ziplock and use it for chili in the winter. Nothing like fresh smelling tomatoes in the winter.
To Freeze:
-Drop the tomatoes into boiling water for about 30 seconds. When the skins just starts to split pull them out and let them cool. Then they'll slip right out of the skin and you can put them into a ziplock and freeze.

Also, you can make a black bean type of salsa for dinner.
-Drain a can of black beans and warm
-Add some sauteed onions & garlic
-Add:
Cumin
Paprika
Salt
-Add some corn
-Add a dash of vinegar
-Add some fresh cilantro
-Add cold tomatoes and serve.
