I feel like everyone has a different method for hard boiling eggs... what is your method?

I put the eggs in the pot before the water boils.. I let the water boil and about a minute after its been boiling I turn the heat down to simmer. Leave it on simmer for about 10 min and then immediately put them in cold water. I've noticed if i dont put them right in cold water the yolks are a greenish color and noone eats them, so if i put them in the cold water the yolks get that nice yellow color to them lol..

I put them in a pot with water and then bring it to a boil - let boil for 10 minutes - then dump water and let cool in cold water till I remember they are there - then we eat. :)

I have a little egg cooker. I put some water in, put in the eggs, and turn it on. It cooks them perfectly every time, and no steaming up my kitchen boiling water. Mine came from an estate auction, so is fairly old, but if this one breaks, I will immediately go out & buy a new one. It also poaches and soft boils eggs. Totally worth the $$ IMO.
But as for the cooking on the stove top methods, I think the one I used most was to put the eggs in cold water, bring it to a boil, then cover & let them sit for a certain period of time, then put the eggs in ice water to stop the cooking.

I just fixed some this morning and used the method in the New Joy of Cooking. Bring a pan of water to boil. Add eggs and simmer (not boil) for 12 minutes (med eggs). Rinse in cold water. These were great, yolks were yellow and they were not rubbery. Also they peeled really easily.

Well, I used to think the trick was taking the eggs out of the hot water as soon as they were done, and putting them in cold water. Alas, those results weren't always consistent.
So, I found what works for me! I put about a T of salt in the water when boiling the eggs. It really does make the shells not stick! :)

Fill pan with water and eggs, add a tsp of salt to prevent the eggshells cracking, put on medium high heat stirring once in a while before it comes to the boil to ensure the yolks are centered. Then boil for 8 minutes, drain, fill pan with cold water, drain, repeat a few times till eggs are cool to touch and peel.....

Put eggs in a pot of cold water, bring to a boil, turn off heat and let set for 10 min, then put under cold running water until my 5 yr old comes up to me and says "Mom, the eggs are drowning!" hehe ;)

To make them peel nicely, I always use old eggs (a week or two)
