I have some velveeta and some frozen broccoli. My pregnant taste buds would like broccoli cheese soup. How can I make it?

Here is a great recipe from the Black Eyed Pea restuarant. I don't have a double boiler so I just make sure to watch it very carefully and cook over pretty low heat.


Black-Eyed Pea'S Broccoli-Cheese Soup
Yield: 8 Servings

Ingredients

1 1/2 lb broccoli -- fresh
2 c water
3/4 ts salt
1/2 c cornstarch mixed with 1 cup
1 cold water
1 pt half and half
1 lb velveeta
1/2 ts pepper

Instructions

Steam broccoli until tender. Place half-and-half and water in top of
double boiler. Add cheese, salt and pepper. Heat until cheese is
melted. Add broccoli. Mix cornstarch and water in small bowl. Stir
into cheese mixture in double boiler and heat over simmering water
until soup thickens.

oh yea, since you have frozen broccoli I would just defrost it in the microwave in place of the steaming and I am sure you could substitute milk for the h&h if you don't have that on hand.hth
