View Full Version : Easy freezable sauces/casseroles for after babies birth?

I am looking for really easy freezable sauces to throw on noodles/rice or casseroles...besides the old spaghetti, lasagne etc
Hamburger, diced or shredded chicken, tuna, shredded beef or vegetarian is preferred as that is what I have right now....and my kids are NOT picky!!
I am nesting, big time, and wanting to get this done!!!

HMM - I would make up some chili to serve over rice, some chicken pot pie filling to just thaw and toss into a refrigerated crust, have some meatballs to throw into sauce and serve either in rolls or over pasta.
Is there anything in particular you're looking for? Meatless, meat, poultry?

Not anything in particular.....
vegetarian, poultry, hamburger, tuna....it is all good and that is what I have right now! LOL
the kids are not picky at all and we have no food allergies!

I just made up a bunch of freezer meals this week. One super easy one was salsa chicken. I put some chicken breasts in the crockpot, just 2 of them, and covered it with salsa/picante sauce. Added a can of corn, drained, and a can of black olives, drained. Cooked it most of the day in the crockpot and took it out and froze it. Last night we reheated it and served it over rice. It was very yummy and so easy to make.

Th way I make salsa chichen is empty a jar of salsa over boneless chicken breasts, add some lime or lemon juice4, fresh chopped garlic and let it marinade all day and grill it. It's easy gourmet!
Meatballs are really versatile. I would make or buy jarred teriyaki sauce for teriyaki meatballs. Add chopped green and red pepper and pineapple with the juice for hawaiian style. Make swedish meatballs with packaged or freeze ahead sauce. Make a version of beef stroganoff with make ahead sauce, meatballs and egg noodles (use that easy cream of mushroom/sour cream recipe). Make meatballs and pour on bbq sauce for a different flavor.
My favorite freezer meal after this baby was the chicken enchiladas I made ahead a froze. I used corn tortillas which I softened on a cast iron skillet with a little oil. I mixed enchilada sauce in with shredded chicken, shredded cheese and chopped olives. I rolled the chicken mixture in the tortilla and packed them all in a pan and topped with more enchilada sauce and cheese. Then when we ate them we topped them with chopped tomatoe and lettuce and rice and salad on the side.
