...and I am looking for recipes! LOL Do you have any cookbook recommendations or favorite recipes? Today I made a chicken teriyaki and I can't believe it was so easy and came out so yummy!

I always love a roast done in the crock.

I just toss a large roast, one can of beef broth and one envelope of onion soup mix and cook on low for 8hrs. I usually serve with potatoes and steamed vegi's

I always use the leftovers for meals for the next few days. IE. beef enchiladas, french dips, beef barley soup, beef pot pies or whatever else I can think of.

Today I put in some chicken breast and my favorite BBQ sauce (cheapo BBQ sauce + tiny bit o' honey + dijon mustard). I put it in at 11 am and the house is smelling yummy already! I'm loving it!!! It's so dang healthy too!

Here it is!

2-3 chicken breasts
your favorite bottle of teriyaki sauce
pineapple chunks (partially drained if using canned pineapples)
choice of veggies...such as broccolli or green peppers

combine and cook in low for 6-8 hours. i would however would suggest adding the pineapple chunks the last couple of hours or so instead of from the start...because it can get pretty salty. The chicken breasts are so yummy and tender.

The recipe is simple, but I loved it!

hehe, let's just say i didn't sew that night...can you imagine the sauce smelling up the fabric!!!


Here's another that worked well...

Pork Roast (I got the cheapy one from the store, but you can use any type of meat really)
Fajita seasoning (can come in a packet or you can make your own)
1 can of enchilada sauce
1/2 bottle of salsa

I covered the pork really well with the seasoning and combined the rest of the ingredients in the crock pot. I cooked it on low for about 8 hours and the meat was just *falling* apart.

Place in tortillas with your fave condiments and they are yummy!

I am originally from No. California and I just *miss* mexican food, and lemme tell ya...this hit the spot!

I do something similar...I don't put in quite so much liquid...usually some water and a splash of wine or just a bit of broth. I also put my potatoes and carrots and onions right in with the roast.
