Looking for 2 or more recipes using canned tomatoes and/or fresh tomatoes.

Cut up egg plant, squash and zucchini, onion and grill in butter until tender. Add a can of tomatoes, garlic powder, pepper flakes and any other spices you like and heat until sauce is warm. Very yummy!

Oooh sounds good thanks. I've never had zucchini I don't think so at least!

That's funny. I just came to this forum to ask the same question.:D I want to stop buying bottled sauce and make up some big batches to put in the freezer. That recipe sounds so simple and yummy Tammy!

This is really good, you can use regular canned tomatoes if you'd like. I made this with the no salt added versions while MIL lived with us.

American Heart Association’s Low Salt Spaghetti With Meat Sauce

1 pound lean ground beef
1 medium onion, chopped
1 clove garlic, minced
5 medium fresh tomatoes, peeled and chopped OR (1) 29 oz can no-salt-added tomatoes, chopped
(1) 6oz can no-salt-added tomato paste
½ cup dry red table wine
½ teaspoon oregano
½ teaspoon basil
½ teaspoon fennel seeds
1/8 teaspoon freshly ground black pepper
1 8oz pkg spaghetti

Brown ground beef in a large non stick skillet. Pour off any fat. Add remaining ingredients except spaghetti. Cover and simmer over low heat 1 ½ hours, stirring occasionally. If sauce appears too thick, add water.
Cook spaghetti according to package directions, omitting salt. Drain.
Pour sauce over spaghetti and serve.

Note..I leave out the fennel.
